Bacon Cheddar Chive Muffins

I tried, I really did. These sounds so good in theory but even with adjustments they come out heavy and bland. I tried twice but I think they got nibbled on and then tossed both times.

I have made this multiple times but I don't think it really qualifies as 'soup', especially when I ate the leftovers which had dried out enough to just be a delicious pasta. I've never had the energy to properly whip the whites but I do what I can by hand and have never had a problem with any frothiness. I highly suggest adding rosemary, it complements the soup perfectly. I also added one carrot, shredded which doesn't change the flavor much but gives the soup a wonderful, warm color.

Red Lentil Curry

I tried this recipe looking for an Indian style curry and was sorely disappointed. I followed the recipe and the results were something along the lines of meatless chili. It didn't taste bad, but it wasn't at all what I was aiming for.

Mediterranean Lemon Chicken

This chicken is good but is not meant to be the flavorful center of your meal. I used 2 lemons and more garlic and the flavor still came out very light. I used chicken tenders and turned them twice as I don't have a baster. They came out fairly tender and I served them over couscous with asparagus. My only complaint is that all of the sauce burned even after I decreased the temperature there was nothing left, though the chicken seemed unaffected.

Garlic Chicken with Orzo Noodles

I didn't have any parsely so I did as another reviewer suggested and instead added rosemary and lemon juice and I cooked the orzo in chicken broth. The pasta came out delicious and I could not get enough of it. I underestimated how much spinach to put in and continued to add it to leftovers. The chicken, however, came out bland and rubbery. It didn't take on the flavors at all. Next time I'll add more vegetables and skip the chicken.

Easy Fried Eggplant

I used italian bread crumbs because that's what I had. You have to add more oil as you go otherwise the eggplant will burn very quickly. I found I like the eggplant in thinner slices and more soft than crunchy. I will try these again in the future.

Grilled Lemon Herb Pork Chops

These were delicious. I ended up marinating for closer to 48 hours and they came out so tender and juicy. My boyfriend raved over them.

Five-Veggie Stir-Fry

This will be my fall back recipe whenever I make veggie stir fry. I used my own preferred mix of vegetables (broccoli, snow peas, squash, and a red jalapeno) and used ginger paste since that's what I had. The sauce did come out a little thick so next time I'll cut back on the corn starch. I had it with brown rice and it was delicious.

Spring Lime Tea Cookies

Interesting taste and very light and cake like, my favorite kind of cookie. They should have cooked longer and I think I'll add some green food coloring next time.

Baba Ghanoush

Absolutely delicious! I used two medium sized organic eggplants because that's all that was available. I probably should have cooked the eggplant longer but I was eager to get going. After I removed the peel, I cut it up and covered it in salt for 30 minutes to avoid the bitterness so many people encounter. It must have worked because it came out wonderfully and none of the flavors seemed overwhelming.

Brooklyn Girl's Penne Arrabiata

Delicious! I made this without the chicken for a lighter meal but it's wonderful all on its own. When I was buying the ingredients I ended up purchasing all organic ingredients which only improved the recipe. In the future I think I'll try adding a vegetable, maybe zucchini.

Alfredo Sauce

Bacon Cheddar Jalapeno Poppers

Simple but yummy. I took previous reviewers advice and cooked the bacon a little before wrapping which seemed to work well. I used shredded cheese and didn't have any issue with the cheese running out. I left a few seeds in which added just a little heat. I think I'll try this with more kinds of cheese to spice up the flavor.

Peanut Butter Fudge Cake

The cake came out really dry and tasteless, but after I added the peanut butter and icing, it made up for the taste. After it was put away for the night, the toppings softened up the cake and made it nice and moist. The fudge-like topping is rich, but not too sweet. I might make this again.
