Easy Decadent Truffles

Reviewed: Sep. 23, 2009
This was a great recipe. To melt the chocolate chips I had a pot with water on the stove on a medium-high heat and used a small metal bowl to melt the chips in. It came out extremely smooth and creamy. Add the melted chocolate to the cream cheese mix. I made four different batches in different flavoring. My nephews and niece really loved them, that is a great sign. :)

Ginger Glazed Mahi Mahi

Reviewed: Aug. 31, 2009
Great recipe. I don't think the reduce glaze is necessary because the fish has a great taste without the added reduction sauce.

Excellent bread. It came out just like the picture. I did as other reviewers suggested and used only 1tsp salt. Also left out the cornmeal.

Herbed Twice-Baked Potatoes

Reviewed: Aug. 18, 2009
This is a winner. I followed other suggestion like coating the skin with a little olive oil to give it a more crispy skin. I also added a little cheese on top in the last 7 minutes of baking.

Ranch Dressing II

Reviewed: Jun. 23, 2009
I used a vegan mayo found at your local health food store for a more healthy version. Also I increased the garlic powder to 1/2tsp and added 1/4tsp of vinegar. Then instead of using 1/2c sour cream I used 1/4c buttermilk and 1/4c sour cream.

Strawberry Ice

Reviewed: Jun. 23, 2009
Great recipe and very simple to make. I did make a few adjustments since some people in my family are unable to eat sugar. I used a liquid stevia depending on your sweetness level 8-11 drops I only used 8drops we don't really like things to sweet. Also took other people's suggestions and used orange juice in place of the lemon juice and cut the water to 1/2c. Will try making a raspberry and lemon flavor next should be good.

Cake Mixes from Scratch and Variations

Reviewed: Jun. 23, 2009
I made the spice cake variation. It was horrible really dry even using oil instead of shortening. I added about 1/4c extra milk and doubled the spices, but it came out dry and bland. Will not be making this cake again.

Cinnamon-Roasted Almonds

Reviewed: Jun. 8, 2009
I made this snack for my mother. She cannot eat regular sugar so I replaced the sugar with SweetLeaf stevia. For half the recipe that would be 2 cups of almonds I used 2 1/4 tsp of stevia. My mother absolutely loved this!

Bread Machine Pizza Dough

Reviewed: May 22, 2009
The dough was prefect. I used the bread machine only on the knead cycle whch was for 20 minutes. I followed some of the other reviews and added 1tsp each of basil and garlic powder. Once the kneading was finished I rolled the dough into a ball and placed it in a greased bowl covered with oiled sran wrap and towel over the top and placed it in a slightly warmed oven. After 30 minutes of rising the dough I punch it down and tossed to form the pizza pie.

Rosemary Chicken with Orange-Maple Glaze

Reviewed: Apr. 22, 2009
I used 1/4c real Vermont Maple syrup and the sauce was perfect. It does not need any more maple syrup it would make it taste too sweet. Also I did not have any fresh rosemary so I used about 1tsp of dried rosemary. I recommend doubling the rosemary, salt and pepper rub.

Tomato Mozzarella Salad with Balsamic Reduction

I typically do not like tomatoes, but this salad was excellent. I added the olive oil, basil, salt and pepper to the balsamic reduction once it was cooled.

Creamy Broccoli Soup

Reviewed: Feb. 4, 2009
I'm sensitive to dairy and wheat so I made some changes. Instead of the milk I used 1/2 the container of silken tofu saved the other half for later. Left out the cheese and flour. It was so good, loved it! Used frozen vegetables so I can make this anytime.

Really spicy. I am going to try this recipe again and perhaps leave out half the green chile peppers. I did add 1 can of beans like other people have suggested.
