Grandmother's Oatmeal Cookies

Reviewed: Nov. 27, 2011
This is the best oatmeal cookie recipe around! I used butter instead of shortening but otherwise stuck to the recipe. The cookies tasted great and were soft and moist for days! These cookies were favorites with my family!

We loved this! I used long grain white rice and it was a little dry but GREAT tasting. I'll definitely make it again!

Chunky Potato Soup

Reviewed: Dec. 27, 2010
This was a huge hit at our house. It didn't last for leftovers! Easy to make and really good! My only tip would be to make sure to keep a CLOSE eye on the cheese/milk mixture as it never really boils but gets foamy on top. I made the mistake of not realizing that was what I was looking for and it went up and over the sides of my pan in the blink of an eye! Even cleaning up my stove was worth it! This soup is WONDERFUL!

Creamy Au Gratin Potatoes

Reviewed: Dec. 27, 2010
These tasted okay but took forever to get done! I also chopped the onions and layered. My tip is to make sure to cover so the top doesn't get too done and to slice the potatoes thinly. I used a 9x13 in. pan to bake this in and mine took an hour longer than the suggested cooking time. It was good but I don't know if it was worth the wait. The sauce however made a great base for broccoli cheese soup so I guess it wasn't a total loss!

Soft Peanut Butter Cookies

Reviewed: Apr. 8, 2010
Made as directed and didn't even refrigerate and these were a hit. Be careful on the baking time though. It's a challenge to make sure they're done as they don't really brown. These cookies stayed soft for me in a ziplock for three days. Then it wasn't an issue as they were gone, gone, gone:)

White Texas Sheet Cake

Reviewed: Apr. 8, 2010
I am a huge fan of the chocolate version of this recipe but this one is almost too sweet for me. I made it twice. Once using all vanilla and the second time using all almond flavoring. I liked the almond better but it's still SUPER rich. I also used pecans on top and that helped cut the sweetness. You will need to mix them into the frosting when it's hot though. Otherwise, they won't stick to the frosting. Like the chocolate version, it's important to frost the cake when the cake AND frosting are hot. Then the frosting isn't too thick as some other reviewers mentioned. I used a 9x13 in. cake pan and baked for 43 min. at 350. If you're using a foil pan it only takes 39. Make sure you have a cold glass of milk and limit your portions and this cake will be a hit!

Grandma's Gingersnap Cookies

Reviewed: Dec. 18, 2009
These cookies turned out so well that they looked like they came from the store! How flat your cookie turns out is directly related to the temperature of your butter. If you want a flat cookie, don't chill the dough. Chilled dough gives you a ball cookie. Although both taste good, the flatter cookie looks like the more traditional gingersnap. This recipe is definitely a keeper in our house!

Swiss Chicken Casserole II

Reviewed: Sep. 28, 2009
I made this for my family tonight and everyone loved it. I used the whole box of stuffing and left it uncovered. It was wonderful! Can't wait to doctor it up next time with cheddar and broccoli. Rave reviews from the whole family and incredibly easy!

Pecan Pumpkin Dessert

Reviewed: Nov. 24, 2008
This was an awesome dessert! Even my husband, who isn't a pumpkin pie lover, loved this. I baked it about 20 min. longer than the recipe said. Let a toothpick be your guide. Also, I found that when inverting the dessert it's helpful to have another set of hands! Wonderful dessert overall.

Sweet Potato and Apple Casserole

Reviewed: Sep. 11, 2008
This is a recipe that is a "must have" at the holidays. It's easy, tastes great, and although it counts as a vegetable it tastes more like a dessert! I like being able to add more sweet potatoes or more apples depending on the tastes of the crowd. Great the next day too.
