Awesome Carrot Muffins

Reviewed: Jan. 3, 2008
My daughter and me made these yesterday and they are amazing. Very moist and full of flavor. We did change the amount of oil, by replacing 3/4 cups of apple sauce 1/4 cup oil and they turned out really well, while taking out a lot of that oil that was requested. I also put in 2 table spoons of ground flax seeds for more nutrition. I will be making these again and again

Butternut and Apple Harvest Soup

Reviewed: Sep. 28, 2009
My family and I loved this soup. I did take the suggestion of others and baked the butternut squash in the oven whole for 1 1/2 hours at 400 degrees. It was so easy to peel the skin off, scoop the seeds out and puree with the rest of the soup. I added 1/2 cup of milk instead of cream. It is such a nice warm hearty soup, perfect for cold and rainy days. Thanks for the recipe! It is a keeper for our family!

Whipped Shortbread Cookies

Reviewed: Jan. 3, 2008
These cookies turned out amazing. I am more of a cook then baker but everyone was raving about them. The only thing I added was a half teaspoon of pepermint extract. My hubby and in-laws eat them as soon as they are placed on the table. Thanks again

Ham, Potato and Broccoli Casserole

Reviewed: Feb. 5, 2014
I have made this one time, exactly how the recipes is, no substitutions and I found it was really salty for our liking. I think instead of canned milk, use 1% or skim, and instead of parmesan cheese, just use mozzarella and cheddar and it would be a nicer flavor. I would also pre-cook the french fries on their own first, so they stay crispy once the layers are added to it. We found the fries mushy.

Gramma's Date Squares

Reviewed: Nov. 21, 2012
I just made these date squares, followed the recipe with out any substitutes or changes and I have to say the date filling is way to sweet. Even the children said it was too sweet! I think the next time I make these I will not add any sugar to the date filling and put only 1 cup of flour as some suggested.
