Hummus III

I followed this recipe pretty much to the "T", but it was too bland. I just kept adding tahini, lemon juice, and chickpea juice and pureed until I got the consistency I liked. I also added more garlic, but was a bit reserved because the last time I made hummous on my own, I used TOO much garlic. I let it sit overnight, and the hummous was delicious, but not garlicky enough. So, like others have said, this is a fantastic base, and just fool around until you get it how you like it. Hopefully you have an amazing blender to give it the right consistency. I will use this base all the time.

Zucchini Cheese Garlic Appetizer

It was delicious! The smell was so pungent when I was mixing it, I was afraid it would be too garlicky, but it was delicious! I didn't add parsley because I didn't have any, but otherwise, I followed it to the "t". It is very, very savory, and I used it as a side dish. I should have halved the recipe because It was just for my small family. There's a lot left over.

Grandma's Corn Chowder

Oh my gosh! Delish! Made vegetarian for my daughter and regular for the rest of us, and sorry vegetarians...you don't know what you're missing! Well, maybe you do, but the bacon makes this soup! The only thing I changed was used veggie stock instead of water and evaporated milk instead of half and half because I didn't have any. It's freaking amazing! You have to try it!

Slow-Cooker Lasagna

This recipe is very similar to traditional lasagne, just without the need to boil the noodles. Could do the same with the oven ready lasagne noodles. With that being said, I've made this twice, and both times it took about 30 minutes to prepare and longer than four hours to cook. I cooked it the second time 3 hours on low and then an hour on high, and it was too liquidy, but good (used veggie crumbles for my vegetarian daughter - yummy). I forgot that it was on after eating (I had turned it back down to low), so what was left cooked at least another two hours, and it was perfect! I'll have to remember that MY slow cooker needs six, not four, to cook this perfectly. As another reviewer stated, it was pretty bland, but I'm not giving up on this one. I will try it again, for six hours and by adding seasoning to the meat while browning and using a better quality spaghetti sauce. Third time's a charm, right?

Yummy Sweet Potato Casserole

DEFINITELY YUMMY!!! I read through the reviews and followed many suggestions: can of sweet potatoes to save time, lt. brown instead of white sugar, evaporated milk, and 1 tsp of vanilla rather than 1/2. I did not double the topping mix like some suggested because I don't like too much topping, but my kids might have. Luckily I didn't because I used a 9x13 pan as directed and the sweet potato layer was thin. Also, it was super easy to make; I just threw everything in the bowl and used a hand-held/immersion blender. Regardless, this was THE BEST sweet potato casserole I've ever had. I wish I had doubled the recipe because my kids ate up almost the entire pan! The only reason they didn't was because I cut them off, haha! I will definitely double it next time, and I will definitely try fresh sweet potatoes also. So yummy! Definitely making often!!

Easy Corn Pudding

I made this according to suggestions, and it was fabulous! I'm sure it'd be great as is also! I actually had bags of frozen corn on hand, so I used that, I included the sour cream, added two eggs and 1/4 cup sugar. It took about 1/2 an hour longer to cook because I made such a large batch. I quadrupled the recipe and took it to a family gathering last night. The first pan was gone almost instantly, and my godmother made me put the second pan in her freezer so she could have it another time! Hahaha! It was so delicious! Thanks for sharing!

Has such a great flavor! I don't usually like these veggies, but it was very good. I doubled the recipe and gave some to neighbors who also loved it! I even used some in scrambled eggs the next morning.

Fried Cabbage II

I did not use bacon or sugar because of my diet, and used balsamic instead of cider vinegar, and this was still very good. It was a bit bland but I added salt and it was great! I will try some bacon bits for flavor in the future.

Impressed Myself Chicken

this was AWESOME!! my wife is dieting and i made this for me and the kids and what a hit. and it's light enough (bacon aside) for my wife to enjoy too. instead of pounding the chicken, i butterflied the breasts. thanks and this is a keeper!

Home Style Macaroni and Cheese

This was delish! Definitely a keeper! I did make a few adjustments because I didn't have everything on hand. I used a 1 lb. bag of elbow mac and it was just fine, but I did add extra butter per one reviewer. I didn't have enough milk so I used evaporated milk. I also didn't have dijon, so I used ground mustard. Per another reviewer, I added some garlic and onion powder. I've learned to use an electric hand blender to cream the cream cheese into a sauce with other recipes, so I did that. The only thing I would change would be to not use so much bread crumb topping...I like it better with just a little topping. Anyway, my two picky boys loved it...so that's the best compliment of all!

Pecan Pie Bars I

I didn't understand this recipe at all at first, but then realized I was making a shortbread type crust (can you tell I'm not a baker?). Anyway, this recipe is out of this world. Soooo easy, and even more delicious than easy! This is a treat that I will make over and over again!

Cherry Pound Cake

First time I made this, I dredged the cherries completely as instructed. I didn't care for that too much - the cake was delicious, but I thought I'd actually prefer a little cherry flavor in the cake. The second time, I doubled the cherries and didn't dredge so much or long, and it was perfect for me! I love this cake and will make it for special occasions again and again!

Zesty Slow Cooker Chicken Barbecue

I listened to the other reviewers and used Sweet Baby Ray's and shredded the chicken. This recipe was soooo amazing!!! I will be making it at the end of the month for my family reunion. It is so easy and delicious. I made a huge batch and froze the leftovers. I won't do that again - it didn't freeze well. Just another reason to eat more (in addition to it being so good) when it's done!

Chuck's Favorite Mac and Cheese

Unfortunately, I neither had nor like cottage cheese called for in the original recipe. This modified recipe substitutes 2 eggs for the cottage cheese, and it was like going back to my childhood! It was soooo amazingly good! Super easy. Next time I might try to modify a bit on my own by adding chopped onion and ground mustard, but for today, this was down-home, hit the spot mac-n-cheese!
