Broccoli Casserole

OMG, this was sooooo good! Could easily be made into a main dish with the addition of chicken...can't wait to try it that way.

I have been making a version of this for years and I absolutely HATE crushed pineapple, but love this. I had to give this a 4 as I would think it would be a little bland compared to the one I make. Mine uses less pineapple, chopped pecans, finely chopped white onion instead of green, and a tsp of seasoned salt. It's always been a hit!!

Crispy Catfish

Was a little skeptical about grilling catfish, but I was looking for something to keep dishes at a minimum...followed the recipe to a "T" and we loved it!!! Even DH, who wouldn't eat fish unless it was fried for the longest time, raved about it!!!

Blackened Tuna

Really turned out good. I did inside in a cast iron skillet and had no problem with smoke. We like our fish a little more done than most people, so I went the whole 4 min per side...will definitely back that down to 3 min next time.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

I will definitely try again, but will tweak it just a bit. I wound up using the entire 8 oz block of cream cheese because after I added the water I felt it was way too thin. Next time I think I'll use 1/2 and 1/2 in place of the water and take it from there.

Quick and Easy Chicken Spaghetti

Very good recipe for those evenings that you're rushed. I did add a little Chipotle Tobasco sauce for just a little more kick & used cream of mushroom (DH won't eat mushrooms, so I snuck them in this way :-)

Potato Salmon Patties

Very good recipe to ad lib with. I thought it was a bit dry, so I added a little lemon juice, horseradish, and ketchup. I used a 1/4 measuring cup to scoop them up with and they turned out gorgeous!

Tilapia Soft Tacos with Chipotle Cream

Loved this!!! I only sauted for about 3 min over med heat & used cole slaw mix instead of greens. I think next time I'll add the cole slaw mix in with the fish to let it steam a little. Like the cinnamon, but might cut back a tad next time.

Chocolate Cream Cake

I think the problem with the filling not turning out might be not creaming the butter/shortening/sugar long enough. I beat mine on high for 5 to 7 minutes & followed the recipe to a "T"...it turned out exactly like the picture. Thanks for a great recipe!!!

Caramel Frosting I

Followed the recipe exactly & it turned out excellent. Didn't make enough to frost a 9 x 13 cake though. Next time I'll make at least 1.5 times the recipe. Used it to frost a banana cake, also from this site.

Southwestern Rice

I halved the recipe & because I had a lot of diced tomatoes I wanted to use up I sauted a chopped jalepeno with the first step. I doubled the spices, but other than that followed the recipe exactly. It turned out excellent & I would happily serve it to friends or order it in a restaurant!!!
