Amazing Chicken

This is a good basis for a chicken dinner. I tried this recipe with a slight alteration. I used cut up chicken quarters. My brother LOVED it!!! He had 2 helpings... And so did I and my mother. I am saving this recipe for future reference.

Roasted Duck

This recipe is very simple and goooooddddd!!!! No salt, just add garlic and onion powder to rub. I also used Mrs. Dash's Steak Grilling Blend pepper mix in place of regular black pepper and margarine in place of butter. Best to do the rub at least 12 hours before cooking. Put a stick of margarine to the cavity of duck. After about 30 minutes of baking, brushed on a mixture of half a stick of margarine and garlic with onion powder. Believe me, when it was done, and my family ate it, there were hugs and kisses galores for me. From now on, this recipe will be for special occasion dinners.

Laurie's Shepherd's Pie

This is a good starter recipe. I added to the meat mixture, ground Italian sweet sausage, mushrooms and 1/2 package of thawed frozen mixed vegetables with a little bit of spaghetti sauce. And I took out the pie crust. I made 2 layers in one casserole dish and one layer in another with the mashed potatoes and cheddar cheese crust. The result was a blend of flavor unique to anything else in this world. I wouldn't call it shepherd pie as it didn't contain lamb. Rather I would label it, "Cottage Pie Faux". However you label it, you can't help but call it delicious.

Tasty Tuna Pasta

It was okay. I used this as the basis for my own tuna pasta casserole. Added a can of crab meat and mushrooms. Used Italian Bread Crumbs as a topping before baking it at 390 degree. Served this with an Italian salad with avocado. (Next time I will add salmon and call it "Seafood Pasta Casserole")

Ground Beef Shepherd's Pie

It's a good basic starter recipe for a delicious dinner. Don't know if you can call this a "Shepherd's Pie" as Shepherd's Pie is usually not made with beef. But nevertheless it is a good recipe.

Golden Pork Chops

You know you got a winner when your family eat everything and left nothing for leftovers. I used this recipe along with mashed potatoes and string beans... Can you say, "YUM, YUM!"

West Indian Curried Chicken

This was an okay starter recipe. My aunt used beside curry, garlic and black pepper to seasoned the chicken. And she let it sit in the curry for a while. She also added some pumpkin, yucca and some other starchy veggie I can't remember along with carrots and celery, . It was almost a stew of a sort, served over black eye peas and rice (cooked in fresh coconut milk). Yum, yum!

Potato and Bacon Salad

I would have given this recipe 5 stars but I added a few personal touches. I really don't like parsley and I added a small red onion (sweet)and red potatoes (small and chopped)) to put some color to the salad. (I am lazy when it comes to frying bacon. I put the bacon strips on a foil lined cookie sheet, and placed it in a 420 degree oven till it's crispy. Drain the bacon on a plate lined with paper towel.) Made this with "Shake and Bake" barbecued pork chops,corn bread and Brussels spouts. Can't go wrong there. Yummy!!!!

Balsamic Roasted Pork Loin

This is absolutely the best marinade for pork loin. Nothing was left but the bone after we finished eating the leftovers 2 days later... Wonderful flavor!
