Chewy Chocolate Chip Oatmeal Cookies
Maybe I'm the only one, but thru trial and error over the years, I found the way to keep the cookies (all cookies) full and not flat, is to use almost cold butter. Yes it takes longer to mix the sugar in, but well worth it. If you use butter that is too room temp, the butter is runny, and when you put it in the oven, it liquifies almost. Chunky semi-cold butter works great! Hope this helps some who want to test it.

Downeast Maine Pumpkin Bread
Been making this at Christmas for many years now. Big favorite; great gifts! I tend to get heavy on the spice as thats how I roll. I use 2 cups brown sugar and 1 white. Always have some with nuts; usually pecans, but this year trying walnuts. There is no better pumpkin bread (and don't we all tweek the best to our taste?) Merry Christmas!
