Spinach Brownies

These were great, but next time I'd add bread chunks and a bit more liquid to compensate, as well as broccoli and maybe another green (thinking blanched green beans, peas or kale). Topped with breadcrumbs and this would be perfect. I also found them a little thin for a 9x13 dish so next time I'd either double (or 1.5) or use a smaller dish.

Garlic Ginger Tofu

Pub-Style Vegetarian Chili

Used diced tomatoes rather than whole and beef broth rather than wine. Fantastic. Doubled and froze half, still had plenty for weekday lunches. Next time I'll add some cocoa and maybe coffee in place of the wine.

Just made this again without the corn but with a handful of chopped pepperoncini peppers and it was great! Only needed about 17 minutes of bake time. Will definitely make again and again

Chicken Tortilla Soup V

makes 4 very small servings. Definitely double. Increase garlic and spices and add 1 cup of black beans to make it more of a meal. Also add a jalapeno for more heat

Marrakesh Vegetable Curry

Tripled the spices but was still not as flavorful as a curry ought to be. With a few tablespoons of sriracha, and a little extra salt it was good. I'd make it again with a bit more raisins, even more spices, and some ginger. I used extra zucchini in place of eggplant and black beans rather than garbanzos but would try it as written next time, although I did like the black beans.

Big Soft Ginger Cookies

My roommates raved over these...I made them about three hours ago and there are only about a dozen left! My only advice is to make sure you take them out before they really start to brown, otherwise they're not nearly as soft. Aim for 8 minutes rather than 10.
