I am a working mother to a beautiful baby boy. I love planning my weekly menus, grocery shopping and cooking for myself and my husband. The little guy is finally starting to try some of my cooking too, but he's still picky. That's something I have to keep working on.
My favorite things to cook
My favorite things to cook are slightly healthier versions of recipes I see on this site. I substitute ground turkey and chicken breast whenever I can. I also love baking and have started making that healthier too. I try to cook home-made as much as I have time for.
My cooking triumphs
I love when my husband tells me he's just eaten the best meal I've ever made. He says it a little too often for me to believe it, but its still nice to hear.

Whole Wheat, Oatmeal, and Banana Pancakes
I really enjoy making these pancakes for my 1 yr old son. I use all whole wheat flour and omit the brown sugar and dry milk powder. I usually make a double recipe of the dry ingredients so that I always have some pancake mix on hand for the weekends. When I make the pancakes, I add 2 bananas and some honey to make up for the missing sugar and use 1 egg white instead of a whole egg. I also omit the vegetable oil. This makes for a very healthy meal to serve my son. I also gave some of the mix to my father who is borderline diabetic so that he can have a healthier version of his favorite breakfast. Dry Ranch Style Seasoning for Dip or Dressing
I really enjoy this seasoning blend. I use it for The World's Best Potato Salad on this site in place of the 1/2 cup of ranch dressing. I also make sure to make a couple extra batches to use as a seasoning for grilled or roasted vegetables.

My husband and I love these. The longer they marinate the better as far as we're concerned. We usually eat them with pita bread and hummus or tzatziki. This is one that I marinate early in the week and look forward to.
