Grilled Pork Loin Chops

This recipe is so wonderful that it has become my "go to" when I want to grill pork chops ... especially when I have company. I always get complements on how wonderful the chops turn out.

Zucchini Fritters

Very good and healthy! I just used 1/2 cup of corn meal, and added a few dashes of onion powder and 2 Tb of parmesan cheese. Make sure to drain on paper towels before cooking.

Pork Roast with Thyme

Great recipe! I had a 3 lb roast and it was finished in 2 hrs. I did keep it covered for the first hour and basted as recommended. It was well done, but tender and did not dry out. I also put a pan of sweet potato and apple chunks tossed in olive oil and sea salt in with it for the last hour, and they turned out perfect with the roast. I also made a gravy with the drippings left in the pan. Definitely doing again - thank you!

Pumpkin Bread IV

This is a delicious and easy recipe. I broke it down to 24 servings (2 loaves) and substituted half of the oil with half applesauce and it was very moist. I think it actually enhanced the flavor. I also added 2/3 cup dried cranberries, which made it even better. I took it to my staff meeting, and everyone gobbled it up. The good thing about breaking it down to 2 loaves is that it is perfect for one small can of pumpkin without any waste. Great recipe, will definitely do again with the cranberries.

Sophie's Zucchini Bread

Normally when I have zucchini in the garden that get too big, I feed them to the cows, or make bread with my old recipe. This time, I tried this recipe, and it was delicious. The only thing I changed was I reduced the cinnamon to 2 tsp. as a personal preference, so it wouldn't over-power the rest of the flavors. It was great and will become a regular recipe for me. Thank you for sharing!

Banana Oat Muffins

Delicious! I only changed a couple of things to make them lower in fat, and you would not even know it. I used lite sour cream, substituted 1/4 cup of butter with 1/4 cup applesauce and only used the walnuts in the topping. Thank you for the great recipe!

Garlic Shrimp Scampi

Ohhh heavenly! I am one that usually alters recipes without hesitation, and must admit that after reading through this recipe, I had no desire to change anything! I prepared it as directed, and probably only used about 1/2 cup of bread crumbs. I just sprinkled & stirred, sprinkled & stirred until the sauce remained thin enough to coat the pasta well. I used "italian style" bread crumbs and vermicelli, only because that was what I had ... still PERFECT!

Best Steak Marinade in Existence

This is a wonderful marinade. I used it on some bone-in NY steaks and the flavor was perfect. I put them in the marinade in the morning and bbq'd them that evening. The marinade is thick, so it stays with the meat while it cooks. The lemon was not overwhelming ... just right. Thanks for a definite do again recipe!

The Best Chicken Fried Steak

This recipe definitely is a home run! One thing I have to mention is that the recipe makes enough for at least 6 steaks, so you may want to adjust accordingly. I added 1 tsp. of poultry seasoning to give it the authentic "chicken" flavor. As a substitute for buttermilk, I whisked 3/4 cup sour cream with 3/4 cup milk and it worked great. I didn't put the spices in with the milk & egg. I mixed them with the flour so that when I used the flour for the gravy, it was seasoned. It also wasn't necessary to use so much shortening. I started with 1 cup and added an additional 1/2 cup as I cooked the steaks. This is a wonderful recipe - hope this helps!

World's Best Potato Salad

I tried this recipe, but was a little reluctant because of all the fattening ingredients. It was good, but not much better than my family recipe which has about half the fat and calories as this. I think I'll stick to my recipe!
