My favorite family cooking traditions
Being around lots of family especially during Thanksgiving and Christmas. Even though in Italy we don't celebrate it...but living here and having raised 2 children Thanksgiving has become part of our heritage being Americans! Cannot forget my dad put my first apron on, I was 12 and he told me you better learn how to cook!
My cooking triumphs
Hearing my fiancee tell me that my Lasagna was better than my moms!!!!! If she only knew...: )
My cooking tragedies
lolololol....Angel Food cake. I don't know what I was dong, but it basically blew up in my oven!!! I almost had to buy a new one.

Oven Fried Parmesan Chicken
Nothing beats the messy way of making real fried chicken..but this recipe I must say is right up there! Bounissimo!! I used all the ingredients mentioned by Judy, but did alter some dosages and the pan I cooked it in. I used italian seasoned bread crumbs, so it already had parsley, but added 1/2 tsp anyways. I opted not to bake in 9x13, instead used a jelly roll pan. Due to having all that added butter I thought it would be too greasy. By cooking it in the jelly roll pan at 375 degrees it came out super crispy and soooo tender! It was the best recipe I have ever tried for oven fried chicken!!!! I did add an extra bit of parm, grated fresh..and it was delicious. While the butter was melting I took the garlic clove and infused it the butter...you have to do this. Smells terrific and adds to the taste! 5 stars for sure and my honey loved it!!!!! We had leftovers and all I know this morning he had taken it all to work and now they are asking for the recipe so the others wives can make it! Thanks Judy!!!!

Oven Fried Chicken III
We love fried chicken..but I HATE Mayo..so subbed it with fat free sour cream..the taste was Xcellent and less fattening! The family love it. I also set the oven as many have suggested to 375..quicker and the chicken stays moist. All in all..would make again. But working on another recipe for oven fried chicken...When using bread crumbs or Panko, make sure you watch the amount of additional seasoning. For these already have some in them.

Linda's Lasagna
Being from Florence...I was amazed that someone would even think of making lasagna with cottage cheese! I certainly would not be doing it again. I wanted to give it a try and followed others...RICOTTA, and lots more cheese! Other than that it was alright. Good luck!
