Mom's Zucchini Bread

My garden is already overflowing with zucchini so I decided to try this recipe out to use some of the bounty. I am pretty surprised because I found this bread to be very moist but rather bland. I did follow some of the suggestions- using 1/2 applesauce 1/2 oil, combining brown and white sugar, using 3 cups of zucchini and sprinkling the oat topping suggested in several reviews. Since I did deviate from the original recipe I feel I need to at least give it a three but if I was rating on taste alone I would have given it a two. There just wasn't much depth of flavor and overall was just okay.

Chicken Stew with Dumplings

I sort of followed the stew recipe but used my own recipe to make the stock and added some extra seasonings. Also left out the potatoes as they seeemed overkill. It turned out quite tasty. I followed the dumplings recipe exactly and found them to be bland and tasting more of flour than anything else. Would make this again but with a different dumpling recipe.

Beef and Mushroom Stuffed Peppers

As written I would just rate this 3 stars but following suggestions in reviews it was quite good. I did add Paula Deen's House Seasoning and cayenne pepper to the ground meat while browning. After draining meat I also added about 2 cups cooked white rice. Used entire two cups of gravy in mixture to bind and made a third cup to drizzle over cooked peppers. I also seasoned the last cup of gravy a little to give it some added flavor. It turned out pretty good despite the fact that I only had green peppers on hand. I am sure it will be even better with red.

Pear Salad II

I grew up on this recipe, as did my Mom and her Mom. People look at me like I am crazy when they see me eating it but it is sooo good. Reminds me of my childhood.

Asian Salmon

I debated on how to rate this recipe since it turned out delicious but if I had actually followed the recipe the results would not have been as appealing. I had 1 1/4 lbs of salmon and doubled the sauce recipe. It ended up being the perfect amount of sauce for two people. Can't imagine having 2 lbs and following the sauce recipe as written. I also added 1 tsp of fresh ginger since I can't image an Asian dish without that. Also the baking time really seemed off to me. 30 minutes is a long time to cook salmon- even a thicker filet. I checked mine after 15 minutes and they were done (and they were average sized filets). I did taste it at this point and it was good but not great and the fish was not very appetizing in appearance. So I followed the advice of another reviewer and removed the filets from the marinade and stuck them under the broiler on low for about 7 minutes. THey carmelized beautifully. I also condensed the sauce on the stovetop a little. Did do the dill rice(make sure to cover the rice when you lower to simmer temp) and served it on a platter with the salmon on top and a little sauce drizzled over it. Garnished with a fresh dill sprig. Looked and tasted wonderful. The broiling is a must! I think Grilled Salmon by Tina is still my favorite but we will definitely make this one again.

Apple Cake V

I have made this several times and keep forgetting to review the recipe. I really have nothing new to add except that this cake truely is wonderful! It is one of those cakes that just keep getting better and better each day. I stick pretty closely to the recipe except I do add some cinnamon. I chop some of the apples in small pieces and leave some in larger chunks. I also omit the walnuts because my DH does not like them. But definitely try this one. It is a keeper.

To Die For Blueberry Muffins

I was planning on making these for my Christmas brunch but decided to make a test batch this morning. Boy, am I glad I did. These are nothing special. I stuck to the recipe pretty closely with the exception of adding a little vanilla, cinnamon, and fresh nutmeg to the batter. Despite these additions, they were still really bland. The topping just sort of melted and I used very cold butter to make it. To be honest I have had better from a box. On the positive I filled the muffin cups 2/3 of the way and the muffins did set up correctly. I did not used cupcake liners but greased my cups very well and had no problems with the muffins sticking. I will not make these again.

Busy Day Chicken Rice Casserole

I hesitate to even rate this since I changed it so much. I wanted to make it a little healthier so I used low fat, low sodium soups, brown rice, and used only about 1/3 of the onion soup mix. I also omitted the water completely and used 1 1/2 cups skim milk. I added about 1/2 the package of onion soup into the soup/rice mixture and then sprinkled a couple of teaspoons on top. I also used skinless drumsticks. I covered very tightly and baked for about 1 hour and 40 minutes than removed and let sit for another 10 minutes before removing the foil. The flavor was very good and not the least bit salty. And the nutty flavor of the brown rice with the soup mixture was very good. The chicken fell apart so I just mixed it all up before serving. However, like almost everyone else my rice was not cooked properly. I even used a heavy pampered chef 9x13 casserole dish and a convection oven to assure even baking. Ended up sprinkling some water over it and microwaving it for a couple of minutes to soften up the rice a little. It ended up pretty good but wish I could figure out how to fix the rice issue. You really aren't supposed to take the cover off while cooking rice but maybe stirring occassionally is the answer. I might try it next time.

South Beach Peanut Butter Cup

I love this. I also only put tbsp of PB and I use the Smuckers all natural. After mixing it together I refreeze it for a few minutes. This is a great way to satisfy my chocolate/peanut butter cravings.

Honey Grilled Shrimp

Thought this was very good. I doubled the marinade ingrediants but left the worcestershire sauce the same. Also substitued sherry for white wine. Added a dash of pepper to the honey/butter combination but otherwise followed recipe. Shrimp were very flavorful. I cut up fresh pineapple and put chunks on a separate skewer. Grilled a little longer than the shrimp and basted with the honey/butter basting sauce. Was fabulous. Served with steak and grilled veggies. Thanks for the recipe.

Bourbon Pecan Chicken

I wasn't quite sure what I wanted to rate this so I settled on four stars. The taste is very good and we enjoyed the meal immensely. However, I do have some issues with the recipe. For one thing I cooked two large chicken breast but kept the sauce proportions the same as the original recipe. I ended up with enough sauce to drizzle a good amount over the chicken without smothering it and a little to drizzle over the mashed potatoes. But that was it. I am not sure how the same amount of sauce would serve 8 pieces of chicken. Another issue was that like a previous reviewer I also had problems getting the coating to stick to the chicken. I bought pecan pieces and then pulsed them in my food processor a few times so they were pretty fine. They were not however as fine as the bread crumbs. I don't know if this was the problem or what. I did brush the chicken with a little melted butter before coating but this did not seem to help. I might try baking the dish in the oven next time instead of frying and seeing how that works. Overall the meal was good but the recipe has a couple of problems and is a fairly involved process. Just a side note: to clarify butter easily just melt a stick in the microwave then let sit a few minutes. You can just spoon the fat off the top then pour the yellow liquid into a separte container. THis does not give you the pure clarified butter that straining will but it works fine for this recipe.

Fish Tacos

Just had this tonight and really enjoyed it. I liked the different flavors that you got with the fried fish, cabbage, warm taco shell, and cold sauce. My husband loved the beer battered fish and after eating two tacos went back for more fish. I followed recipe pretty closely except omitted capers, used red cabbage, and only used a small portion of the jalapeno. It was still plenty spicy for us. It is a little time consuming so will not be a staple in our meal planning but I will definitely make it again.

Garlic Salmon

This was pretty good. I did brush the fillets with a little olive oil before adding the remaining ingrediants but otherwise followed recipe. Threw them on the grill for about 15-20 minutes. Made a nice light meal. Only gave four stars because as recipe written they were good but not exceptional. However, I served the fish with the dill sauce submitted by Lisa and the combination was outstanding. Will definitely make again. Thanks for the recipe.

Barlow's Blackened Catfish

This was ok but certainly not the best catfish I have had. I only used 1 tsp cayenne pepper (kept other seasoning same as recipe) and still thought it was a little spicy. I am from Louisiana so the spice didn't bother me but my husband thought it was definitely too hot. The flavor was good but not great. Not sure I will make this again.

Grilled Potatoes and Mushrooms

These were really good. I followed some previous suggestions and was very liberal with the recipe. Only used a couple of potatoes and siced very thin but still used the whole can of soup. Add about 1/4 onion, a handful of mushrooms, dash of salt, and some garlic powder. Mixed it all in large bowl then onto foil with pats of butter. Double wrapped in foil and cooked for one hour on grill. About 5 minutes before serving I openned up foil packet and threw on shredded chedder cheese to melt. They were creamy and delicious. Thanks!

Grandmother's Oatmeal Cookies

Ok, you've heard it before in other reviews but it bears repeating- these are the best oatmeal cookies I have ever had! LOL! And I don't even like oatmeal cookies that much. I made them for my DH who loves them and after one cookie he said, "Wow! These are really good!" I think this will be our recipe from now on. I did sub chocolate chips for raisins but otherwise followed directions exactly. Baked on pampered chef stone for 14 minutes first batch and 12-13 minutes following batches. YUM. I'm going to go eat some more!

Salmon with Dill

I actually like the Grilled Salmon recipe on this site better (the one with brown sugar, soy, etc) but still giving five stars because it was very easy and tasty. Followed recipe pretty closely except added some garlic powder and used the Pampered Chef dill mix instead of plain dill. Also made a homemade dill butter and served with a pat of that on top. Very good.
