Fluffy Pancakes

I've made these often and they always come out delicious. I use a substitute for the egg (vinegar, water, baking powder) because my toddler is allergic. And they still come out great. This morning, my very picky 6 year old said, "Mmmm. These are so good, I'm not going to use syrup today!" I also always double the recipe and whatever's left over I freeze!

Grilled Fish Steaks

Very easy to make and a very simple, but pleasant taste. I used much less olive oil, though - only 2 tbs for 2 servings, and that was plenty. I also broiled it, because it's the middle of winter. I would definitely make this again.

Grilled Swordfish with Rosemary

This recipe was pretty good. Not amazing, but very simple to do. I marinated it for 2 hours, so I can't whether 1 hour would have been enough. But 2 certainly is.

Microwave Frittata

This wasn't disgusting, but it wasn't great either. It would've been just as easy to cook in a pan. It took more than 5 minutes for the eggs to cook, not 2 1/2 minutes. The actual recipe was pretty good. But, unless my stove was out, I wouldn't make this again in the microwave.

Chocolate Chip Mini-Muffins

These were OK. I thought the batter was a little bland, but there are enough chips to make it tasty. I might make them again since they're so easy and my 4 year old had fun. But he barely ate them and LOVES muffins. *I used soy margarine, soy milk, and milk-free chocolate chips since my son is allergic to dairy* The recipe said it makes 18, but I got 27 mini-muffins.

Broiled Pork Chops

Dairy Free Chocolate Pudding

I made this for my 3 1/2 year old that's allergic to milk. I didn't have cocoa powder, so I used Hershey's chocolate syrup instead. I also used vanilla soymilk instead of regular. Otherwise, I just followed the directions and it came out great. It was VERY sweet, but did have a slight soy taste. My son's never had regular milk or pudding, so he certainly didn't care. There are very few chocolate products he can have and it's nice to have a few as a treat. It was so quick and easy, I can make it for a nice snack.
