Baked Ziti IV

My family LOVE LOVE LOVED, this recipe!!! I actually doubled the sauce so that I could feeze half of it to use for another meal later. Instead of ground beef and pork sausage I used ground turkey and turkey italian sausage (sweet). I also used part skim ricotta instead of cottage cheese. Other than that I cooked it just as suggested and it was SO TASTY!! It was very easy to make and I will definitely be making this again!

Chicken Tortilla Soup V

I loved this recipe! It was sooo easy and quick to make I will definitely make it again and again. I took the suggestion of some reviewers and added 'mexican style' beans (with liquid to thicken up the soup) and also used a packet of taco seasoning for flavor. I think it made the soup more like a meal. I only had canned corn so I used that and it came out great. I boiled the chicken before hand and shredded it before adding it to the soup mixture. The amount of broth you add just depends on how thick or soupy you want it.

Little Meat Loaves

I absolutely loved this recipe. I made it with 2 lbs. of ground turkey instead of the ground beef and sausage and it was not greasy at all. I also used onion soup mix instead of the fresh onions to give it even more flavor. My daughters (who claim to not like meatloaf) loved it and even had seconds! This recipe is definitley a keeper.

Awesome Slow Cooker Pot Roast

I thought this recipe was great. I made a few modifications based on other reviews. I used a 3 1/2 lb. Sirloin Tip roast since that's what was on sale. I rubbed the roast w/Pappy's seasoning and then seared it with olive oil before putting it into the crock pot. I only used 1C of water so that it wasn't too watery. I also replaced 1 can of Cream of Mushroom w/Cream of Celery. I added sliced onions, carrots and potatos 2 hrs before it was supposed to be done. I cooked for 4 hrs. on high but it wasn't as tender as I wanted so I cooked it an additional 2 hrs. on low and the meat and veggies were perfect. It was great! I served it with stuffing (the easy kind). My boyfriend loved it. I think next time I'll try to start it in the morning and cook on low while I'm at work.

Spinach Dip with Water Chestnuts

This is my favorite appetizer recipe! I prefer to make it with the Leek soup mix instead of the Vegetable mix and also add a minced garlic clove. For best results I make it the night before and refrigerate overnight to help the flavors meld. Everyone is always asking me to bring it to parties and it disappears every time. I usually buy sliced sour dough bread and cut it into bite-size pieces to eat it with and serve it in a sour dough bread bowl.
