Toffy's Tortilla Soup

Reviewed: Mar. 11, 2012
Hubby and I really enjoyed this soup. What great flavor. I added more garlic,(6 cloves),1 tsp of Cumin, one can of white beans,2 qts of chix broth, Rotisserrie Chix, the Rotel(diced tomatoes with green chile peppers), the 4oz of Green Chilies chopped,1 6oz can of Tomatoe Paste, 3 tbls of jarred Lime Juice ( my limes are still not ready to be picked),leftover Mexican Restaurant Tortilla Chips, and a touch of Cilantro as I forgot to buy that, omitted the Cayenne and the Rotel was plenty spicy for us. Topped it with Sour Cream and Cheddar Cheese. Next time I will add the Cilantro and Fresh Limes. I did pick some fresh Basil leaves and tossed in a handful of that the last 10 min before serving to get them to go limp. Delicious recipe, and for us a Keeper. Thank you for sharing this great tasting quick to make hearty soup. And I have leftovers to freeze. It was 103 degrees today, but this soup was worth cooking. It will be a body warmer in the winter.

Reviewed: Sep. 27, 2011
This recipe is a keeper for me. I made it last night using butter and goats milk...then added it in globs into my Beef Veggie Soup covered it for about 20-30 min and it all was delicious. I was going to withhold the full amount of salt at first but I did add all the salt. A keeper. thanks for sharing.

Herman Pancakes

Reviewed: Apr. 16, 2009
This is a keeper. These puffed up nice. I added a grated gala apple, and 1 tsp Cinnamon, 1 tsp vanilla. Although I used 1 cup Sourdough Starter, without sugar. Amish Starter is the new Herman Starter. And I think Herman changed it's name LOL. Good Recipe that is for sure.

Sourdough Pancakes

Reviewed: Feb. 18, 2009
A Keeper. Made them this morning for my Uncle and I and he just loved them. I thought from the rest of the reviews they would be thin like crepes, but heaven's no and just delicious. The only flour in these is the flour in the starter. I made my first batch of starter from a Family Recipe yesterday and used it this morning. So, old starter may have had a stronger sourdough flavor. I made these using my very thick gloppy starter, so the 3/4 cup may have been a cup full or almost. This isn't a science either. I use a cast iron griddle that covers 2 stove burners and used my 2oz Stainless Scoop as a measure. I got 9 pancakes 4 1/2- 5" pancakes. My picky adult Son said these are good Mom. Keep this recipe. They did puff up in the centers and just like all pancakes flattened down as they cooled a bit. This recipe was very easy and quick to make and no problems, and certainly these pancakes are not flat. Different starters such as the runny ones will make a difference, in that case then add a bit of flour to a thicker consistency. Flavor and texture are nearly as good as any other pancake on the market. We ususally always use Krusteaz and I have to thin that alot to get the batter to spread out. This is a Keeper.

Beautiful Summer Salad

Reviewed: Apr. 3, 2008
This recipe was a beginning for me just now. I added finely chopped celery,a good amount of chopped fresh basil, balsamic vinegar, olive oil, and about 2 tbl of a Lite Italian Dressing, and a heavy sprinkling of a No Salt Seasoning. This is tasting very good now. I felt it was too bland before, and too much of the papaya flavor came thru. Papaya is ok until the after taste hits. Ick. I am trying now to remember why I bought the ugly thing in the first place. But, I thank the submitter for sharing and allrecipes.com for posting it.This salad turned out great with my additions.

Moroccan Lamb with Shiraz Honey Sauce

Reviewed: Feb. 2, 2008
I liked this recipe. I have to say I found on the internet the Ras al Hanout but I made enough to last forever and share. I probably put too much on the lamb, which I boned out for simplicity later. My Husband scraped off the seasoning and then he thought the lamb was great. I did love the Shiraz Honey Sauce. I would make this again but will use a bit less of the seasoning.

Roasted Vegetables

Marinating the vegetables was the big difference in the great flavor in this recipe. Overnight was perfect, and guests raved about these Roasted Vegetables at Christmas Dinner. I wouldn't change a thing....another great keeper from a great site.....Thanks to the submitter.

Peanut Butter Kiss Cookies

Reviewed: Jan. 21, 2008
This recipe deserves 5 stars and is a keeper. I won't ever make another P-nut Butter Cookie. These vanished yesterday after I made them to take along to friends for a BBQ. I had no real problem with the recipe but next time I will use my Kitchenaid Mixer. It was difficult by hand but not the recipes fault, my own. My P-nut butter was quite cold from storage in the garage which actually lent to my dough not being soft when done at all, and needed no chilling, balled up very nicely. I rolled them in Turbinado sugar before baking, and poked the Kiss point down...seems to hold better that way. I did use both Reg Kisses, and Truffle Kisses...the Truffle kisses melted into a circle and took a long time to set back up. I dont wait until the cookies are baked then add the kisses, I get er done before I bake them. I did use the 3 sugars, tripled the recipe, and glad I did. I put back about 1/2 the dough wrapped in wax paper to bake later. Thanks for this great recipe.

Big Soft Ginger Cookies

Reviewed: Nov. 18, 2007
Cant stop eating these wonderful cookies. Baked them this afternoon, got 46 walnut sized before baking. If I stayed out of the cookie dough I am sure I would have gotten 48 cookies. Hubby and I both think these are great cookies. I had to use Crisco Butter Flavor shortening instead of butter. I added 1 tsp Cinnamon.Note to all: I sifted the 2 1/4 cups flour before I measured it out for the recipe, then added the remaining dry spices etc. I rolled them in Turbinado Sugar,(a light brown sugar noticeably coarse. The dough was soft and with my Pampered Chef small cookie scoop the dough was just fine. I scooped and dropped into the sugar,(about 1/2 cup) rolled slightly with my fingers and lifted them to the airbake cookie sheet. 20 dough balls fit onto a sheet with just enough room to spread. They spread to about a 3" cookie. Exactly 10 min cooking for my convection oven. Perfect. Mine flattened out all on there own, and are crisp on the outside and chewy on the inside, and cracked tops....a very perfect cookie.
