Santa Fe Chicken Casserole

This was easy and delicious. I added green chiles and used corn tortillas instead of flour, but other than that followed the recipe exactly. Served with cilantro lime rice on the side. It's a keeper! Except it made me really wish I had a margarita! ;)

Strawberry Yogurt Pie I

I have been making this recipe for a few years now and I can't get enough of it in the summer. I don't change a thing. I've tried it with others crusts and prefer the graham. Yes, I eat it for breakfast too. First, it's got 4 ingredients and it takes 10 minutes to prepare - love. Everyone always loves this pie, even people like my family who normally turn their noses up at Cool Whip. I find that the crust does get mushy on about the third day in the fridge but I haven't had problems with sogginess before that.

Creamy Peanut Butter Pie

The flavor in this is wonderful, but I have to give it four stars because of the modifications you need to do. As-is there's just not enough filling for the crust. I doubled the peanut butter and increased whipped topping to 1 cup and I still thought it was a little scant. Just for personal taste I omitted the PB cups and used chunky PB and drizzled chocolate over the top. It really is a delicious pie.

Jennie's Heavenly Slow Cooker Chicken

I absolutely loved the depth of flavor in this super simple dish. I served over gluten-free (brown rice) spaghetti. This recipe is BEGGING for sauteed mushrooms but alas my husband "hates fungus" - next time I'll make them on the side for me. The only thing...the sauce is very rich and thick, which normally I like, but this was like gravy. Maybe next time I'll try less cream cheese and add milk. Thank you for sharing Jennie.

Feta Cheese and Bacon Stuffed Breasts

My husband (a SUPER picky eater btw) and I are making this for the 10th time - this time because we're snowed in! We don't change much except substitute Italian seasoning for Oregano and add a little poultry seasoning. It's also good to add fresh parsley to the stuffing. Great with garlic mashed potatoes. Your whole house will smell like roasting garlic. PS - we've also used cooking rubber bands to secure and these turn out awesome on the grill, but not tonight because of the blizzaster.

Roquefort Pear Salad

Make exactly as-is and you will love. I'm a healthy eater but still have a hard time getting excited about salads - except for this one. It's one of those that is just right as written and if you change it up it's just not the same!

Apple Cider Stew

Nice twist on beef stew and nothing really negative to say about it, but it's missing that special something that would make it memorable. Not sure I would make again unless I had apple cider I was looking to use up!

Dark Chocolate Mousse

I'm rating this recipe for what it is: a creamy chocolate fix in less than 10 minutes with 2 or 3 ingredients. Delish! I used the Extra Creamy variety of Cool Whip for a better flavor. A few words of caution: if you use milk chocolate instead of dark or bittersweet, it will be so sugary that your teeth will rot away before you even finish your dish. And as with any recipe like this, just make sure you temper your chocolate with a small amount of Cool Whip so you end up with a smooth and blended mousse instead of hardened flecks of chocolate throughout. Enjoy!

Bob Evans® Sausage Pinwheels

Oh good golly. I didn't realize I could screw up such an elementary recipe. For starters, DON'T forget that "freeze for 15 minutes" bit. Even when I did that, my crescent rolls got too thin and tore. The pinwheel didn't stay together and the filling spilled out and they didn't look nearly as pretty as this picture. The taste was pretty good (I added some green pepper and onion). I used the garlic butter flavored rolls which added a nice flavor. I never thought I'd say this but adding shredded cheese didn't really enhance this dish. Leave it off and save a few fat grams.

Gorgonzola Pear Pasta

Wow! This was a delicious change of pace for such a quick meal, and a good meatless option, too. The only changes I made were to use half & half instead of whipping cream, and blue cheese instead of gorgonzola. I would give it 5 stars either way. The blue/gorgonzola cheese was such a nice hint in the background, definitely not overpowering. This recipe definitely yields more than 2 servings - I'd say 3 or 4. Last thing - don't skip toasting the nuts! It really does change and enhance their flavor. Enjoy this one, it's a keeper!

California Grilled Veggie Sandwich

Not that this recipe needs another positive review, but I must say it is FANTASTIC exactly as written. I made it a second and third time and would emphasize one thing: don't skimp on the lemon! It wouldn't be the same without. I tossed the veggies in olive oil and lemon juice in a plastic bag, then grilled them on my panini press. Then grilled the whole sandwich in the press. Delicious results with minimal mess.

Pasta Lasagna

In search of the perfect cheesy baked mostaccioli recipe, this is getting very close. I upped the meat a bit and added a little extra cheese, but then I discovered that there wasn't quite enough noodles/sauce for the amount of extra stuff. My bad, I'll do it better next time. It's a great recipe to make your own.
