Backyard Cooper Burgers

You know, it doesn't get much easier or tastier than these burgers! Great recipe...I scaled back for one pound of beef, topped with all the good stuff and there wasn't one scrap left over!

I think I've reviewed this recipe before, but I'm not sure and there are a lot of reviews to scroll back through to find out...LOL! There is a reason that there are so many reviews, too...this dish is FANTASTIC! I change up just a few small things, not enough to classify as a new recipe, though. I don't have garlic salt available, so I add in 2 minced cloves and 1/4 teaspoon of garlic powder along with a teaspoon of sea salt. I've made this recipe so many times and I always go back to it. I featured it in my blog http://lifeinanarv.blogspot.com I have to say that this recipe is spot-on as far as what they serve as a side dish in a Mexican restaurant, if you try it, I promise that you won't be disappointed. Thanks for a GREAT recipe! If I could rate more than 5 stars, I would...

Sea Bass Cuban Style

This was so good! I made 2 1/2 substitutions in this recipe...first, I could not find sea bass anywhere in this town, so I used rockfish, second, I couldn't find my red pepper flakes anywhere, either, so I used a pinch of cayenne! The 1/2 substitution was in the form of using a shallot in place of an onion...they are in the same ballpark, so it only counts as a half! Delicious recipe and I will make this again!

This is super good! I didn't add the candied walnuts to the top because of allergies and I also just made one layer instead of 2. But the taste is phenominal, thanks for a great recipe!

Sri Lankan Potato Curry II

This is a really good recipe. I had to make a few changes because not all of the ingredients are available to me. I cannot find curry leaves any where around where I live and since I only found out last week that I was cooking Sri Lankan cuisine for my blog this week, there simply wasn't time to order any. I read that curry leaves are similar in appearance to bay leaves but they do, in fact, taste like curry. I subbed 1-1/2 teaspoons of curry powder instead. I used a few of my saffron threads, I didn't have powder, but I don't really think that changed the dish at all. I also had to cut back on the chile peppers because my neighbor simply can't eat spicy foods. I used one jalapeno, with the seeds and veins removed and minced it up very fine...he could eat this recipe. As this was cooking, I could totally imagine being in a Sri Lankan marketplace...the smell was amazing. The taste of dish is fantastic! Thanks for a superb recipe!

I really didn't know to expect when I made this and I was wonderfully suprised. I didn't have cashews, I only had hazelnuts, so I improvised with those, other than that, I cut the recipe in half as there were only 2 of us. This is the perfect dessert after a spicy Indian meal. Thanks for the recipe!

Walnut Wheat Bread

This bread is really good...I didn't have any walnuts so I added hazelnuts instead, but that, in itself doesn't hide the actual flavor of the bread...this was the first bread I have ever baked and it came out just fine!

Quick Yeast Rolls

This was the first time I have ever used yeast and this recipe was really simple to follow and I followed exactly. These rolls are delicious, I didn't have any problems with the dough not going into the muffin cups and they baked up huge and fluffy and have a wonderful taste.

I made this and it was sooo good! I read the reviews and one of the more popular things to do was to make double the sauce...I didn't do that, I was only making this for 2. What I did do is zest 2 baby lemons and added 1/2 the zest to the flour mixture that breaded the chicken and the other half into the sauce...so good!

Oh my! This is a really good recipe! I added raisins to mine, because the Dutch apple pies I'm used to eating have raisins in them and I am giving these mini loaves as gifts...recipe made 4 mini loaves!

Orange Cream Fudge

Absolutely a 5 star recipe...I followed this exact and this was my first attempt at a cooked fudge and it is wonderful! I followed one reader's suggestion subbing powdered sugar for regular sugar and it is creamy, delicious and set up perfectly. Thanks for a wonderful recipe! Update! 12-18-11: I have made this recipe at Christmas time for the last three years. It turns out great every time if you use powdered sugar, granulated has always remained grainy every time I use it, but I just give those batches to people I don't like...this year, I switched out the orange extract for cherry extract and nixed the yellow food coloring and went with just the red...otherwise the recipe remained the same...Cherry Cream Fudge...HOLY YUM! This recipe is a super fun recipe to play around with, so get adventurous and try it!

Spumoni Chocolate Chip Cookies

I just made these again, three years later than the first time I made this recipe. I did a few tweaks. You can view the step-by-step photos at www.bakedlava.com I added 2 packages of pudding mix, a full cup of chopped pistachios and a 10-ounce jar of cherries. It's funny, but the first time I made these, they did have an odd, greenish tint to them...with 2 boxes of pudding mix, that tint was just not there. This is just a great spin off a chocolate chip cookie recipe and it is going on my Christmas platters this year. I highly recommend this recipe, either as is, or with my tweaks...it is tasty either way you go!

Sugar Coated Pecans

Oh, my...I followed a few of the suggestions, such as using extracts in the egg whites instead of water and using 2 egg whites. I used 1 teaspoon of rum extract and 1/2 teaspoon of vanilla. I also added 1/2 teaspoon of nutmeg. Really super good!

OMG! This was so good! I didn't know what to expect, never hearing of or experiencing this type of recipe. I did substitute dark brown sugar for the white and I added coconut to the top as I was giving this to a couple of old people with no teeth! Thanks for a great recipe!
