Quick and Easy Alfredo Sauce

This made a very good, creamy sauce. I added some extra spices: lemon pepper, nutmeg, and italian seasoning. Didn't quite need all the milk... had about 1/2 cup left over. Served over bucatini and broccoli. Yum! Thanks.

Mom's Apple Fritters

Fried Cauliflower (Egyptian Style)

I microwaved fresh florets for three minutes with a little water and some cumin. Mixed the batter by hand, adding extra milk to make a thick pancake-batter consistency. I added some cayenne, Mrs. Dash's lemon-garlic seasoning, and garlic powder. Deep fried florets for two minutes at 350, drained on paper towels and salted. Served with ranch dip. Delicious! You won my son over to eating cauliflower!

PHILADELPHIA Key Lime Cheesecake

This cheesecake is creamy and delicious. It isn't overpoweringly "limey", but my family really enjoyed it. My son requests it for his birthday treat now. Inadvertently used a 10" pan this year, so it was only a couple of inches thick, but it didn't hurt a thing. It was finished about 7 minutes earlier than the recipe states.

Spinach and Feta Turkey Burgers

I just made these for dinner. The kids had sandwiches, hubby and I just ate them on a plate with tzatziki and chopped tomatoes. The only thing I added was a pinch of salt and lemon pepper, Oh and I cooked a 9 oz bag of fresh spinach and chopped it (instead of using frozen). They're SO GOOD. My son printed it out and added it to my "Good Recipes" book immediately! (That's an honor around here.)

Amy's Cilantro Cream Sauce

I cut up 4 chicken breasts into cubes and browned them in a skillet. Once cooked through, I poured the sauce over and brought it just to a warm temp. Served it in soft flour tortillas. It's a bit peppery, I might back off on that a bit (but not much). I used 3 cloves of fresh garlic instead of powder, but that was the only change I made. So good!

Turkey Tetrazzini

We liked this very much. I made a couple of "tweaks": Italian seasoning instead of poultry seasoning, a pinch of nutmeg, garlic powder, black pepper instead of white... I made about 12 ounces of pasta and added a cup of the pasta water to the mixture. Good stuff!

Triple Dipped Fried Chicken

This is the BEST chicken ever! I batter dipped 1" strips of boneless skinless breasts. They only took about 10 minutes to cook. (Verified at 180 degrees with a meat thermometer.) After coating the chicken, I took the leftover flour and wash, and mixed it together with about 1/2 tsp. of baking powder. It scooped wonderfully and made delicious hush puppies. The hush puppies cooked for about 7 minutes at 350. Thanks for the great recipe!

Creamy Rice Pudding

Yum! Doubled the recipe and used 1 quart of half and half in place of the milk. For a quick stovetop rice pudding, this is pretty darn good. I use cold leftover rice and just start at step 2. I temper the eggs by mixing in a bit of the hot mixture to warm them before I add them to the pan. (So I don't scramble them.) Sprinkle with cinnamon and nutmeg (or pumpkin pie spice) at the end. This is so quick that I am sure I'll do it again.

Ham and Cheese Crescent Roll-Ups

I make these extra-special by adding a couple of asparagus spears. The ends of the spears get all "frizzled" in the oven, which makes them really yummy. You could also add a teeny bit of mustard if you like.

Jambalaya

Very good. I backed off on the hot sauce a bit, since I am more of a "medium" heat kind of a girl. Used canned turkey instead of raw chicken, since that is what I had. Threw in some small shrimp with there were just a couple of minutes left. Yum!

Buttery Corn Bread

This delicious corn bread is perfect for kids and cranky hubbies that are not sure whether they like cornbread. Sweet, light, moist, and not too grainy. Of course, if you are a cornbread fan, you might miss the gritty texture of cornmeal - there's not much in this recipe.

Tres Leches (Milk Cake)

I took this to a graduation celebration at a Mexican restaurant - and I sent the rest of the pan to the kitchen for the cooks and staff - they LOVED it! If fact, they were offering to PAY me to make more. Made as directed, but wimped out and used Cool Whip on top. Yummy - thanks!

Spanakopita II

Delicious! Quick tips: I used a pizza cutter to make the strips of phyllo. I only used one package of phyllo, which made 36 tarts. I only ended up using about a cup of butter. I made it just like the recipe says, but it would also be good with a little ricotta or some chopped artichoke hearts. This was a dry filling, not a creamy one, but it was very tasty. I am a fan! Thanks!

Spring Lime Tea Cookies

Made these this afternoon - delicious! The only change I made was to the glaze. I took the lime juice I had remaining after juicing 2 limes for the recipe and added powdered sugar to it until the right consistency (about 2 cups-ish). Yum!

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

I entered this in our newspaper's recipe contest. Out of over 400 entries, I was one of 27 finalists. I ended up getting 2nd in the appetizers division. I made short kabobs with only 5 cubes of beef on each, and then stuck them into a voodoo doll made from shaped and baked bread. It was fun. I reduced the cayenne by half and still thought they were plenty hot. One of my family's newest all-time favorites. Great for Halloween or football parties.
