30-Minute Minestrone

EASY, and indeed only 30mins! I added more pepper for more of a kick/Italian flavor. I didn't have fresh spinach but putting in frozen spinach at the beginning (yes still frozen) works just fine. And I used ONE bullion cube so as have less salt and it tasted great!

Spanish Rice II

Very good side dish, but lots of leftovers that were never eaten. I need to get the hang of this "browning dry rice" thing as i feel like i burned a few too many kernels, nuggets whatever there called.

Fried Rice Restaurant Style

Very good, a hit with 5 guys and this girl! No sesame oil (allergy), no peas (ew!) but added extra carrots, & frozen green beans, garlic, dash of hot sauce. Also since I switched to brown rice made sure to cook it w/part of a beef bullion cube.

Salmon With Green Fettuccine

I loved it and thought it presented very well. I simplified the making of the white sauce (same ingredients) as another user did, I used smoked salmon (reduce salt if you use!) my husband did not care much for it. Will try again with fresh. Also the only vegetable i really had on hand was spinach which was fantastic (since i only had egg fettuccine anyway lol)

Spinach Enchiladas

WonderfuL! My husband made 'yummy noises' and that hardly ever happens! Definitely add spices to spinach mixture (cumin, chili/garlic/onion powder) I didn't use cottageC as i was going to, turned out expired but I will try that next time. I used a small amount of thinly sliced yellow onion instead of green was totally fine.

Quick Brownbag Burritos

I've been making these basic burritos for a long time (except w/rice too), and they are always good! Also good w/cheddar, and sometimes I add 1/2 can of corn OR 1/2 can or white beans.

Peach Cobbler VI

This was more like cake with peaches than what I think of for cobbler, if cake-cobbler is what you're looking for go for it. I ate the peaches out of it, but my husband liked the cake part so it worked out for a one time. Our guests were not "wowed."

I found this to be quite bland even after I added some spices and put some sauce inside the spirals. But it was ok and if I add more spices I could see making this regularly.

Southern Macaroni and Cheese

Very good I made this on the stove top, didn't have the time to bake it. Will try next time. I did add some Louisiana hot sauce, splash of Worcestershire, and black pepper.

Strawberry Oatmeal Breakfast Smoothie

Don't leave out the sugar entirely, otherwise the oat taste pops out. As suggested I also powdered the oatmeal some before putting the rest of the ingredients in. I also added a few cubes of ice, it was still thick enough for me. Great that I can have this for breakfast and still feel i'm getting nutrition/fiber not just having fun :) plus just fruit is never filling.
