Onions Baked with Rosemary and Cream

Reviewed: Dec. 28, 2008
Wonderful gourmet side dish for any occasion. I would recommend using the largest cookie sheet possible and baste during the first hour to avoid any dryness issues.

Boston Brown Bread II

Reviewed: Aug. 4, 2003
This recipe produced a nicely brown and moist cake-like bread, but I was not overly pleased with the tart-like aftertaste. May work nicely for a brunch served with different kinds of cream cheese.

Punch Bowl Cake II

Reviewed: May 9, 2003
This is a good dessert for a crowd. I used cream of coconut pudding, skipped the bananas and walnuts, added canned peaches and dessert was a nice creamy triffle-like product which I served at a church function. Hard to go wrong with this recipe, try to use a punchbowl that does not have ripples or designs on the side so one can see the layers.

Overnight Bubble Bread

Reviewed: Apr. 24, 2003
I get better results using 4 cartons of the refrigerated canned biscuits (10 each). Quarter them, then brush really well with melted butter. Combine the pudding mix with 3/4 cup of white sugar, and cinnamon (and nuts if desired). Roll the buttered biscuits in the mix and stack in a large, well greased tube pan. Once the stacking is completed sprinkle remainder of pudding mix then add the rest of the melted butter. Bake at 350 - 375 for 20 minutes. Cool on rack in pan for 10 minutes, then remove bread from pan.

Quick and Easy Monkey Bread

Reviewed: Apr. 24, 2003
Although this is a fun dish to make for kids or an informal brunch, this particular recipe needs some variations which I have listed. I used 4 cartons (10 each) of refrigerated canned biscuits instead of the dinner rolls, omitted the brown sugar, increased white sugar to 3/4 cup, decreased cinnamon to 1 teaspoon, increase melted butter to 3/4 cup. Grease a 10 inch tube pan, remove the biscuits from the pan and cut them in quarters, brush them well with the butter then roll them in the sugar/pudding/cinnamon/nut mixture. Stack them in the pan, then add leftover sugar mixture over the biscuits and butter too. Bake for approximately 25 minutes at 350 - 375. Cool on rack for 10 minutes, then remove from pan

Mandarin Orange Cake I

Reviewed: Apr. 1, 2003
This is a great cake for spring/summer occasions but I made this for my husband's birthday with a few variations. I made this using 2 9 inch cake pans (greased and floured). For the middle layer spread a thin layer of orange marmalade and brush with pineapple juice (saved from the can you will use for the frosting. I used the drained pineapple for the frosting because the juice makes the frosting consistency too thin for my liking), repeat this on the top layer if desired. For the frosting used drained pineapple, 12 ounces of cool whip topping and the pudding. Fill and spread over entire cake, then add some chopped nuts (any kind) on the top for a really decorative touch. For best results, cover and put in the fridge overnight before serving. 5 spoons up!!!

Bacon Roll Ups II

Reviewed: Apr. 1, 2003
This is superb choice for a hot appetizer. I made these for my husband's birthday party and they were devoured in a flash. I used turkey bacon sprayed lightly with olive flavored Pam (since he doesn't eat regular bacon) and chive-flavored cream cheese with a fews drops of tobasco sauce for a little kick. Look forward to making this again with rye or wheat bread. Make sure you flatten the bread well with a rolling pin for the best results. 5 spoons up!!

Stuffed Olives

Reviewed: Mar. 29, 2003
I made these using large black olives, you may have to slice alittle off the bottom to get these to stand up. In the interest of saving time, I used the processed cheese (comes in a can) piped it with sprinkle of paprika and bacon bits. Guests at a church function devoured these!!

Cherry Tomatoes Filled with Goat Cheese

Reviewed: Mar. 29, 2003
Beware the lengthy preparation time scooping and draining the tomatoes!! I ended up piping in the processed cheese (that comes in a can) because it took so long. Add parsley or paprika and item is a nice-looking and tasty appetizer.

Pumpkin Fluff Dip

Reviewed: Nov. 1, 2002
Very nice twist on the standard dip fare. Added a small amount of whipped cream with pumpkin spice to the top for decoration. Served inside a hallowed out pumpkin with cinnamon graham crackers, vanilla wafers and ginger snaps. This went over very big at my son's preschool Halloween event.

Self-Filled Cupcakes I

Reviewed: Jun. 13, 2002
Stop the cupcake recipe search, this is by far the best cupcake I have ever baked. The texture is so moist, I only frosted half the batch! I may experiment with white cake mix, strawberry cream cheese, and white chocolate chips next time. Absolutely yummy!!

Corn and Black Bean Salad

Nice color, spicy flavor but had to add onions and another can of beans to add volume. Still a keeper for potluck dinners or a quick side dish.

Pudding Poke Cake

Reviewed: Sep. 4, 2001
Used white cake mix with banana pudding, therefore it did not look striped when cut, however cake was moist and tasty. Used 8 x 11 cake pan so sides were a little dry (recommend 9 x 13) also had extra pudding left over after frosting. For variety adding chopped nuts to the top. Will make again in proper pan using chocolate and vanilla flavors.

Mexican Lasagna II

Excellent recipe, but a few suggestions to spice it up a little. Choose the spicy taco seasoning mix along with a little Tabasco sauce, cumin, chili powder and oregano. My company raved about this dish!!!
