The Best Vegetarian Chili in the World

Just not my taste. We aren't ready to venture into the world of vegetarian burger crumbles, so I left those out. I also had to tone down the spice to accommodate the kids. I will try other recipes before I try to adapt this one.

Eggplant Parmesan II

Very good. I may try baking without the sauce next time to retain more of the crispness that makes eggplant parmesan so good. The flavors were excellent. I just think it's worth a try to top with sauce after baking.

Yummy Pumpkin Bars

Very good. I have not tried the original recipe, so I am only speaking for this variation, not as a comparison. I was a little nervous to cut the sugar quite so much, so I still used 1 1/4 c. I did not think the bars were too sweet, but with the cream cheese frosting, it would be fine to cut the sugar more as suggested. I did use 29 oz of pumpkin too, so I guess I mixed in some of the other reviews a little. It was very good this way, though I think I will only use 15 oz. next time for a less dense bar. Overall, a great recipe. Everyone enjoyed them!

Swiss Chicken Casserole II

Everyone liked this. I mixed rice in with the soup and milk. If I add rice again next time, I will use another can of soup, as it was not quite as moist I would have liked.

5 Star because I like to rate recipes as far as how they meet my expectations. My family enjoyed them for an easy Sunday evening meal. And my 6-year-old daughter loved making them with me!

Easy Lasagna I

Great, easy lasagna. I do prefer mine a little saucier and will use 2 jars of spaghetti sauce next time. The flavor is good; cheese definitely dominates, though. I will add some Italian seasonings next time.

Yum! I was surprised to see this recipe doesn't include flour - a great treat to make for my gluten-free friends. I did cut the sugar slightly as suggested and they were still very good.

Spanish Moroccan Fish

We have been looking for variety as we try in increase our fish intake. This recipe will definitely be part of our regular collection. I followed the recipe very closely, only using about 1 cup of chicken broth instead of bouillion and water, cutting the spice down to 1/2 teas. cayenne (for preference), and used 20 oz. of mahi mahi (the amount our family eats in one meal). The half reduction of cayenne still gave it a little kick for the adults to enjoy and the kids would eat it too.

Easy Curry Couscous

Best couscous recipe we have tried so far. I was a little nervous about the ratio of couscous and liquid since I used quick cooking couscous. The package instructions call for a 1:1 ratio, but the 1:2 ratio of this recipe turned out perfect. I used golden raisins. The whole family ate it very well.
