Bucatini Pasta with Shrimp and Anchovies

Great dish with great flavor. I substitued the zucchini with yellow and orange peppers since my boyfriend will not eat zucchini. I used a can of diced tomatoes instead of grape because its what I had, and I think it helped give it more of a "sauce" If your worried about the anchovies, just make sure to chop them up really fine...my boyfriend didnt even know they were there!

Dinah's Stuffed Mushrooms

Really wonderful. I followed other reviewers suggestions and used the clam juice. I used olive oil to dampen instead of butter (I didnt have enough butter) until I got a moist enough consistency. I really liked the subtle taste of the green peppers.

Savory Halibut Enchiladas

This was my first attempt at enchiladas and it went quite well!!! I made half fish, half chicken since my counterpart doesnt like fish. I browned a chicken after seasoning with salt, pepper, chili powder and garlic powder and then shredded it. Both versions were excellent!! Oh and I also used low fat sour cream and mayo and it still tasted delicious!

Green Bean and Potato Salad

Very good. I scaled back to four servings. Even so, I felt it might be too much oil and vinger for my tastes. I just used a drizzle of both. I also added salt and pepper. They go a long way in this recipe, in my opinon. Ingredient like tomatoes, olives and red peppers might be a nice addition.

Buffalo Style Chicken Pizza

WOW! This was awesome! I used the 12 in. boboli thin crust and only 4 tbsps of good blue cheese dressing. I added 2 minced garlic cloves to the chicken mixture. I sprinkled with fresh parsley after cooking...really great!!! I was pressed for time, so I bought packaged grilled chicken breast strips and just hand shredded them myself before coating in hot sauce/butter. It cut the time down from stated 55min to just 20 min!

Pico de Gallo Chicken Quesadillas

These are excellent. I use red onions. I also try to cook the peppers and onions just slighty, so they still have a bit of crunch left. I think it improves the texture of the quesadillas.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

I used bread crumbs to coat and baked. I also dulled down the intensity of the blue cheese by using half blue cheese and half cream cheese. Good, but I felt like it needed some sort of sauce to go? Will try again.

Sun-Dried Tomato Basil Orzo

Really needs the cheese to give it that something extra. I add 2 cloves of garlic to my food processer as well. I also made this recipes with fresh tomatoes since a guest wasnt a fan of sun dried. (I used 2 roma's and took out the seeds) Both ways make a great side dish!

Really great! I added some green onions on top in addition to the suggested toppings. I thought one cup of sour cream was a bit too much for me, I may cut it by half next time.

Peppered Bacon and Tomato Linguine

This was great. I gave it four stars because I didnt follow exactly. I had to adjust for what I had. I used cubed pancetta, and tossed in a ziploc bag with two to three tablespoons of black pepper. I omitted the basil used two cans of garlic and basil diced tomatoes (as suggested by others) and I used three cloves of garlic instead of two (I love garlic). I agree more tomatoes for more sauce. I may add a splash of cream and some chicken broth next time to stretch the sauce further. Definatley a keeper!

Quick and Easy Alfredo Sauce

This was excellent. I used fat free half and half and fat free cream cheese and it came out delicious. I also substitued the garlic powder for fresh garlic, and sauteed it in the butter for a few minutes before adding the other ingredients. Very creamy and delicious.
