My family rates this an A+++. I left out the salt and sometimes subsitute roasted red tomatoes for the toasted red peppers.

My family rates this an A+++. You do have to precook the bacon, and I like to use back bacon. It has less fat.

Calico Bean Casserole

Great recipe, however you don't need to use nearly that much sugar. Also drain your kidney and butter beans slightly or you will have too much liquid. BBQ beans work great in place of baked beans with pork...something I can't find here in Africa. Make extra and freeze, you will be glad you did.

Tastes great but you need to double the sauce or it will be way too dry. Also you do not need to add nearly that much sugar unless you have a sweet tooth!

Pretty good, but you have to be careful what you serve it with. It can easily overpower your main dish. I also used splenda and olive oil to make it a bit healthier.

Fat Free Refried Beans

Great healthy recipe. I had to use pinto beans (can't find black here in Nairobi) and don't forget to drain them. I had to use less water, and cut out the liquid smoke (can't get here). I then used salt and pepper to taste. These beans are great on burritos.

I followed the advice of one reviewer and used honey. I did not like that at all. If could be, however, the type of honey we get here in Kenya. I'll try again with brown sugar.
