My hubby and I thought this was pretty good. The one thing I will do differently next time is blend the lobster meat, as I did not like the chunks. The flavor was very good, maybe just a tad too spicy. Would make again with these changes.

Curried Shrimp Bisque

Delicious! Instead of cooking with chicken stock, I boiled the raw shrimp in 3 1/2 cups of water with 2 chicken bouillon cubes. After the shrimp was cooked, I added that stock to the paste mixture. Turned out awesome! I also omitted the brandy.

Roquefort Pear Salad

Wow! This was the best salad I have had in a long time. Even my hubby agreed. I used low fat bleu cheese, a combo of romaine and spinach, and skipped the nuts because I do not care for any type of nut. Will make again and again, as it is a refreshing and impressive dish.

Excellent every time! This is one of those recipes I make every so often, and it never fails to please. I cook in crockpot on low for 8 hours.

Layered Chicken and Black Bean Enchilada Casserole

Definitely a household favorite of ours. I love how you can add/remove different items based on what you have on hand. I like to add canned corn and black olives, and I do toast the tortillas like other have mentioned.

Simple Beef Stroganoff

This is one of our favorites, delicious and very easy! It can be very bland, you have to add more of each ingredient. I usually add about a cup of sour cream, sometimes more depending on the flavor. It is very important to flavor the beef while it is browning. Otherwise the beef is very bland.

Grilled Chicken Over Spinach

This was good. I think it would be better with a different flavor other than vinegar. Something creamier may be good. I did add shredded asiago cheese on top, and frozen spinach instead of fresh. I would make again, with a different sauce.

Mom's Rum Cake

I do love this cake recipe and have finally mastered the glaze! Like others have mentioned, you have to get it to a boil before you pour on cake. I usually boil for 5 minutes and it comes out fantastic!
