Peanut Butter Easter Eggs

Big hit in the Easter baskets! I used a silicone egg mold for these, rather than dipping them. Just coat the mold, allow to harden, shape mixture into the desired shaped and place in the mold and cover tops with more chocolate. Sounds more involved, but was actually much easier!

Chicken Enchiladas II

My family LOVES this recipe! It's very, very good. My son isn't too thrilled with chiles, so instead of those, I added a tablespoon of chicken taco seasoning. I also used cream of chicken soup instead of mushroom. It turned out delicious.

Chicken Piccata II

I put off making this for quite a while after finding the recipe because most of the Piccata recipes I've tried haven't been great. This was very, very good, though. It's very easy, and simple and the whole family loved it. I doubled the ingredients for the sauce, though, so that I would have a little extra to serve over some fettuccine.

Meatball Alphabet Soup

This was delicious! I used Italian sausage seasoning in the turkey instead of the various ingredients in the recipe (it ends up being basically the same thing...just more of a sausage flavor). I also used bread crumbs in place of oats. I did everything else the same way, except using orzo pasta in place of alphabet. The whole family ate it right up...I highly recommend it!

Luscious Slush Punch

SO yummy!! Everyone loves this! And if you want to spice it for adults only, vodka or rum both work beautifully with it! I freeze it in gallon zipper bags for less mess and easy clean up.

Sugar Cookie Icing

I just used this recipe and loved it. I've never been a fan of almond, though, so I did replace it with lemon extract, and it tastes great! For my batch of cookies, I had to triple the recipe and still ran out. But it's beautiful and delicious. :)

The Best Rolled Sugar Cookies

These are wonderful!! They always turn out great! I've made them rolled both thick and thin. Unless you intend to ice them and let them sit overnight to soften, they are much, much better rolled thick. I usually go 3/8-1/2 inch. With a nice think coating of frosting they are almost like fat little cakes! My family loves them.

Mom's Best Peanut Brittle

I am not a fan of peanut brittle, but this tastes just like the stuff my grandpa loved when I was a little girl. My husband really loves peanut brittle and he gives this 5 stars!

Pork Chops with Italian Sausage

I have been making this recipe for a few years and it's one of my favorites! I like more sauce for mine though, so I double the tomato sauce and red wine, as well as using a full pound of sausage. This is excellent served with brown rice!

Apple Breakfast Bread

I made this recipe exactly as directed, except that I made it as muffins to cut bake time for a special Valentine's Day breakfast. Turned out delicious! Just before putting them in the oven, I sprinkled turbinado sugar on top. I baked them for 20 minutes at 375 degrees and they turned out perfect. Made 18 muffins.

Buttery Soft Pretzels

These turned out delicious! And even better the next day!! I made them with bread flour instead of all purpose and they came out wonderfully soft and slightly chewy. Otherwise, I stuck to the recipe, as is. We have made a lot of pretzels and find the shaping annoying, so we made bites instead. Also, for those having trouble with rising issues, etc., this recipe calls for active dry yeast, you should check to make sure you aren't using bread machine yeast, which is instant and needs no preparation in sugar water. When using instant (bread machine) yeast, just mix it in with the dry ingredients, then add the warm water as usual. I hope this is helpful. It's also important to keep in mind that flour packs down, so if you aren't shaking it up a bit before measuring, then you are probably actually getting more than the required amount. Loosen your flour before measuring it out and you may find that you don't need less after all.
