Spring Lime Tea Cookies

I think these cookies were so-so. I followed the directions exactly and found them to be bland. However, I loved how thick and soft they are. With a little more lime flavor, they were perfect, but I also tried a thick, creamy frosting with them the second time I made them, and it made all the difference int he world.

Peanut Butter Easter Eggs

Big hit in the Easter baskets! I used a silicone egg mold for these, rather than dipping them. Just coat the mold, allow to harden, shape mixture into the desired shaped and place in the mold and cover tops with more chocolate. Sounds more involved, but was actually much easier!

Hamburger Cookies

These are super fun. I skipped the coconut and just did some frosting 'cheese' and 'ketchup'. The first thing my son said when he saw them: "CRABBY PATTIES!!!"

Chicken Enchiladas II

My family LOVES this recipe! It's very, very good. My son isn't too thrilled with chiles, so instead of those, I added a tablespoon of chicken taco seasoning. I also used cream of chicken soup instead of mushroom. It turned out delicious.

Chicken Piccata II

I put off making this for quite a while after finding the recipe because most of the Piccata recipes I've tried haven't been great. This was very, very good, though. It's very easy, and simple and the whole family loved it. I doubled the ingredients for the sauce, though, so that I would have a little extra to serve over some fettuccine.

Meatball Alphabet Soup

This was delicious! I used Italian sausage seasoning in the turkey instead of the various ingredients in the recipe (it ends up being basically the same thing...just more of a sausage flavor). I also used bread crumbs in place of oats. I did everything else the same way, except using orzo pasta in place of alphabet. The whole family ate it right up...I highly recommend it!

Spanish Rice Bake

This is a great, family friendly dinner. I made a few changes, though, since I didn't have all the ingredients. Instead of canned tomatoes and chile sauce, I added tomato sauce and taco seasoning. It was still very, very good...and a little more appealing to my son this way. :)

Waffles I

Very good. Freeze well too. I beat the flour into the eggs slowly to keep the lumps out and it made a very light and airy waffle. The family loved them.

My Amish Friend's Caramel Corn

Wonderful!! I have never been a big popcorn/caramel corn person, but I canNOT stop eating this!!! I package it for gifts during the holidays and everyone is in disbelief that I made it from scratch!

Slow Cooker Beef Stew I

This is a huge hit in my house! Our son loved it...and he's NOT a stew eater. We like a 'brothier' stew, though, so I doubled all of the broth ingredients (beef broth, spices, etc.) as well as the flour for thickening. The first time I made it as is and it was more like beef and veggies with gravy. The second time it was more stew-like. Delicious either way, though! I also added a tablespoon of worchestershire sauce instead of a teaspoon (2 TBS for more broth). Thanks! It's great!

Buttery Soft Pretzels

These turned out delicious! And even better the next day!! I made them with bread flour instead of all purpose and they came out wonderfully soft and slightly chewy. Otherwise, I stuck to the recipe, as is. We have made a lot of pretzels and find the shaping annoying, so we made bites instead. Also, for those having trouble with rising issues, etc., this recipe calls for active dry yeast, you should check to make sure you aren't using bread machine yeast, which is instant and needs no preparation in sugar water. When using instant (bread machine) yeast, just mix it in with the dry ingredients, then add the warm water as usual. I hope this is helpful. It's also important to keep in mind that flour packs down, so if you aren't shaking it up a bit before measuring, then you are probably actually getting more than the required amount. Loosen your flour before measuring it out and you may find that you don't need less after all.
