Best Beef Dip Ever

I made this for tonight's dinner, following a couple of Crystal S.'s suggestions (to reduce the rosemary to 1/2 tablespoon, and replace 4 cups of the water with 4 cups of low sodium beef broth). Our 4 lb roast cooked on low for ten hours. It and the au jus were delicious! I served it on franchese rolls that I first buttered and broiled. A family hit! I will never use powdered or concentrated au jus broth again.

Slow Cooker Split Pea Sausage Soup

This is the only way I made Split Pea Soup now. Making it in the crockpot is not only easy and economical, but it's healthier than canned because I control what's in it. I don't add meat to the recipe, but my daughter likes to serve hers with bits of cooked ham. I pop my immersion (stick) blender right into the crock pot after it cools a bit, and blend til smooth. Delicious! I also freeze it in single serving containers to enjoy later.

Extra Easy Hummus

I didn't have any tahini, so I was pleased to find this recipe. But, I was even more pleased with how easy it was to make, and how delicious it was. My family loved it, including my picky kids. I love that I can make it any time because it calls for ingredients that are pantry staples at our house. Delicious with veggies, pita bread, chips, or on sandwiches.

Easy Herb Roasted Turkey

I've always opted out of making the turkey because of all the basting that had to be done. This recipe takes it out of the process, and to my and my husband's amazement, produced a turkey more juicy and tender than the ones we used to baste. It was falling off the bone delicious. The skin was not crispy, and I know some people like that, but we don't eat it anyway. This is the way we're going to make it for Thanksgiving this year, most certainly!

Portobello Mushroom Burgers

Delicious! Broiled them in the oven on a rack on a cookie sheet as another reviewer suggested. Served on toasted sourdough with garlic aioli and lettuce. Adding this recipe to my permanent file.

Make-Ahead Vegetarian Moroccan Stew

I underestimated the time it would take to prep all the ingredients, but it was well worth it! Delicious! Next time, I will pre-chop the vegetables and combine the spices to make it faster to cook. I made it to deliver to another family and there was enough for my family to have a full dinner, as well. Served with cornbread and salad.

Bean Soup With Kale

I search for simple and delicious recipes. This one's a keeper! I added chopped carrots, and simmered a piece of Parmesan rind in it for added flavor. Topped with shredded Parmesan. Half of my family eats meat, so I browned some Italian turkey sausage in a separate skillet, then they added it to their own bowls.

Puttanesca I

Absolutely delicious! My family loved it - made it twice in one week. I used two 15 oz cans of petite diced tomatoes, an 8 oz can tomato sauce, green olives stuffed with pimento, black olives, and kalamata olives. Oh, and I use anchovy paste rather than fillets because it's easier.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

A Winner! I make this often now, usually with fresh spinach. I add a pat of butter to the olive oil for extra flavor. Both garbanzo beans and white beans work. Both taste delicious, but the white beans are easier to mash a bit in the skillet. Super quick, healthy side dish or light main dish.
