I love collard greens and I was so happy to have found this recipe that calls for olive oil, both my husband and I have high cholesterol, and by replacing some good fat for the bad fat, satisfied my taste for this dish. I've had collard greens made with ham hocks or tons of bacon, but this recipe taste just as good to me. Even my husband who didn't care for collard greens before said that this recipe was a keeper. I did however, add a tsp of garlic pwdr and a dash of apple cider vinegar...other than that, I followed the recipe as stated. Thanks Mr. Adams for sharing a wonderful recipe!
