Everybody that taste this cake loved it. My mother said it was a little dry, and I should have left all the juice in it. I drained the carrots and pineapples. I poured half of the juice back in it. I left out the walnuts (by mistake) and sprinkled on them top of the cake after frosting it. I made it a 3-layer cake, using 8" pans, and there was enough leftover to make a small baby loaf cake. (My intentions were to sprinkle the nuts between the layers after I spread the frosting.)
This was my first Carrot Cake and I am very proud of it. My daughter said she wants me to bake it again and one of the brothers at the church ate some and it made him curse on a Sunday.
