Honey Balsamic Vinaigrette

Delicious! Quick and easy with an immersion blender. I substituted gluten-free tamari for the soy sauce and omitted the white sugar.

Oriental Cold Noodle Salad

Converts super easily to gluten-free: just substitute rice or bean noodles for soba and use a GF soy sauce. I also threw in a bag of shredded broccoli/carrot/cabbage slaw for more color and texture. Lots of compliments, both gluten-free and the regular version.

Mom's Cucumber Salad

Too much mayo and too sweet for my taste, even doubling the vinegar. I would use less mayo & sugar if I were making this again.

Asian Stir Fry Sauce

I halved this, but felt there was too much cornstarch - it came out thick. Would recommend using less, even if this is a corn starch company recipe. :) I used rice wine instead of sherry, and left out the corn syrup. The flavor was very good though!

Rice with Lemon and Spinach

I substitute chopped artichoke hearts (frozen or canned) for the mushrooms, and reduced fat shredded mozzarella for the feta. I love the suggestion of adding capers so I put in about a tablespoon. I use about half a lemon's worth of juice and omit the dill. Will also try it with brown rice for a healthier whole grain.

Hot Artichoke and Spinach Dip II

This was SO delicious! I used Tofutti faux cream cheese and light sour cream, and it tasted amazing. No one guessed there was anything weird about it, and it cut down on the cream amounts for those with issues. I will definitely make this again!

Microwave Apple Crisp

I never use my microwave for cooking, but this was perfect for an apple crisp craving. I used two packets of instant maple & brown sugar oatmeal, and decreased the sugar to about 1/2 cup (could use less). Not the same as oven baked, but this is surprisingly delicious for a fast dessert.
