Honey Balsamic Vinaigrette
Delicious! Quick and easy with an immersion blender. I substituted gluten-free tamari for the soy sauce and omitted the white sugar.

Oriental Cold Noodle Salad
Converts super easily to gluten-free: just substitute rice or bean noodles for soba and use a GF soy sauce. I also threw in a bag of shredded broccoli/carrot/cabbage slaw for more color and texture. Lots of compliments, both gluten-free and the regular version.

Mom's Cucumber Salad
Too much mayo and too sweet for my taste, even doubling the vinegar. I would use less mayo & sugar if I were making this again.
