Almost 5 years ago I searched the net for a cheesecake recipe for I had never made one before and I wanted to give it a try. So, I found this great recipe made very few alterations that were proposed by reviewers and made my first cheesecake, not only was it a BIG hit but my family won’t eat any other cheesecake elsewhere !!
these alterations are
the crust should be made as follows
1& 1/2 cups graham cracker crumbs
1/4 cup melted butter
1/4 cup sugar
1/2 tsp ground cinnamon
make sure you grease the sides of the springform pan and not just the bottom,
make sure all ingredients are around room temperature, otherwise the batter will be lumpy,
overbeating will cause a cheesecake to crack and have the wrong texture so beat the cream cheese with sugar only until smooth then proceed with a wooden spoon for the rest of the recipe.
i would also like to state that this recipe is PERFECT as it is and does not need a water bath and the baking instructions should be followed to a T.
