Pumpkin Gingerbread

I cut the recipe in half and made 12 large muffins. Baked 20 minutes at 375°. I did follow the recommendation of those who suggested to increase the amount of spices. PERFECT ! . . . and sooooo easy !

Boston Baked Beans

Exactly the recipe I was looking for! Great taste and easy to make. I also drain the soaking water, use fresh water to simmer the beans. I only simmer for 30-45 minutes (I use that water) then cook the beans in a crockpot overnight on low. Wouldn't change a thing but I guess you could adjust molasses and sugar to taste. In the morning they're done. If they're not thick enough for me I take the lid off and set it on high and let them cook some more until they are the consistency I like.

Buttermilk Oatmeal Muffins

I bake a lot of muffins and I'm always looking for new recipes. This one is a keeper! Fantastic base recipe. Very moist muffins. You can make them into anything you like. I added cinnamon and vanilla like others suggested and threw in some frozen raspberries. Mmmm! Mmmm! Delicious!!! and oh the possibilities ! From simple (dates) to fun (banana/chocolate chips) to scrumptious (peach/blueberry). . . can't wait to try them all :-)))

Lemon Cranberry Muffins

Beautiful and delicious!!! Great recipe. I also used zest and juice of a lemon since I didn't have extract. I put the juice in a measuring cup and topped it with milk to make a cup. That soured the milk which made for an even better muffin! Variations of this recipes are lemon-blueberry, orange-cranberry (Mmmm mmm. . . my favourite!), etc. etc. Definitely a keeper.

Shrimp Tetrazzini

I was pleasantly surprised with this recipe. . . really wasn't sure about the mayo, but it turned out quite good! Added garlic and fresh parsley, added the parmesan to the sauce and sprinkled some more on top before baking. I like a lot of sauce so in my kitchen this would be a meal for 3 at the most, instead of 4, using less pasta. I've also made it using scallops and I like it even better than with shrimps! If you don't have sherry white wine is okay to use in this recipe.

Chunky Potato Soup

This is SO SO good and thick and creamy! I added a clove of garlic and used Gouda instead of Swiss, because I lovvvvvve Gouda . Didn't change anything else but sauteed the onion, garlic and celery until tender in a tbsp of oil before adding the broth and potatoes. But that's just because it's how I start all my soups. This one is a HUGE hit and a definite keeper. Easy too!

Cream of Mushroom Soup I

This recipe doesn't need tweaking. Add a clove of garlic if you must and use wine (either white or red) if you don't have sherry in the house. But really it is pretty good as written!

Banana Orange Bars

Those are very good. MAde the same adjustments as others (2½ cups bananas, ½ cup oil, 1 cup sugar) and added a bit of almond extract (miammm!) Even with just one cup sugar these are quite sweet. Baked it in a smaller pan and it was thick enough and more like a cake so I could slice it in half and use frosting (I doubled the recipe for frosting) between the layers. Mmmm Mmmm good ! FROSTING : I did cut the amount of sugar by almost half and it was just perfect.

Linguine with Clam Sauce

This was VERY good! And so quick and easy. Ran out of olive oil so used half n half olive/vegetable and it still turned out great. Would have used more garlic myself but my BF is not a big garlic lover. I ended up thickening it a bit using cornstarch which I DON'T like doing but since I like a thicker sauce.. . will be looking into using pasta water and less oil next time as others have suggested. . . AND oh yes . . . use FRESH herbs if you can ! I did ! Served with parmesan YUMM !

Gramma's Apple Bread Pudding

This was so good!!! As an alternative to the vanilla sauce I prepared a maple syrup sauce : Boil 1 cup water, 1 cup maple syrup, ½ cup brown sugar for 5 minutes. Combine 3 tbsp softened butter with 3 tbsp flour and gradually spoon in the syrup mix while stirring until it thickens. I didn't change the ingredients except I used butter instead of margarine and prepared it a bit different : combine milk and vanilla, add the bread and raisins, let rest for 5 minutes. Cream butter, brown sugar and cinnamon, add eggs and beat for 5 minutes. Combine this with bread mixture and add apples. I followed another reviewer's advice and placed the dish into a larger water dish for baking. PERFECTION !!!
