Zucchini Herb Casserole

It's summer, which means zucchini everywhere! I had some giant zucchini and a few tomatoes from my brother's garden. This was perfect! I had some rice in the fridge that was already cooked. I followed another reviewer's idea, and I added two pounds of shrimp (I sauteed them in a little oil with garlic powder, then added them before it all went in the baking dish.) The kids gave it "infinite thumbs up." I'll definitely add this to our rotation!

Ray's Chicken

This is our go to chicken marinade. I like to buy up chicken, make multiple batches and put it all in the freezer. It marinades great as it thaws. This way, I have quick easy grilling options! Thanks, Ray!

Slow Cooker Barbeque

I substituted a two chopped onions and a few minced garlic cloves for the powders. After the 8 hours, I strained the sauce and discarded the fat. I removed the fat from the shredded beef and added another bottle of Sweet Baby Ray's. It was wonderful. I use a Foodsaver vacuum sealer, so I froze some and sealed it (I was stockpiling for after our baby was born.) I reheated it in the bag in a pot of boiling water. Husband and I both loved it!

Slow Cooker Beef Stroganoff I

I made a double batch of this the first time. I am expecting our first baby, so I wanted to put some meals in the freezer. I split it and froze it in two separate foodsaver bags to make reheating in boiling water easy. We had it last night. It's FABULOUS. Since I made a double batch, I took some suggestions from previous reviewers. I added a package of onion soup mix, some garlic and two jars of mushrooms. I also browned the meat before flinging it in the slow cooker. I cooked it on low for 8 hours. It reheats beautifully. We weren't sure about the cream cheese, but it really is quite good! Try this one with no reservations. Will make over and over again (I'm going to make a lot since I have a huge slow cooker.)

Black Magic Cake

Made this for my husband's birthday, and this is now the official chocolate cake at our house! It's the moistest chocolate cake ever! Thanks for the great recipe. Delightful with the cinnamon coffee frosting, but would be great alone, as well.
