Misti's Chicken Marinade

I halved the recipe and marinated 5 large chicken breast to grill. I didn't have lemon pepper seasoning so I used the juice of half a lemon and ground pepper. Moist chicken!

Yummy Fruit Pizza

YUMMY is definitely what this recipe is!!!! Instead of kiwi, I used fresh blueberries from my garden. 32 marshmallows equals 1/2 the bag. Make sure not to leave the butter and marshmallows while melting on the stove because it will burn quickly. Also, to press the marshmallow mixture on the pan I used the back of a large measuring metal cup sprayed with pam (this makes for an even 1/2" - 3/4" crust). Hubby was not fond of the cocoa powder in the cream cheese filling. Next time I *will* leave out the cocoa powder. For the cream cheese filling I used Bonnie's fruit dip-halved recipe, plus 4 oz. of cream cheese and only 1 cup of confectioner's sugar (it was more than enough, and it was all I had). Can't wait to make this for the kids friends...great way to get them to eat their fresh fruits!!!

Butterscotch Sauce II

This is a very thin sauce. I cut back the milk to 1/8 cup and did not boil. Paired it with the Super Duper Easy Apple Cake recipe.

Super Duper Easy Apple Cake

DELICIOUS! A boxed cake mix that doesn't taste like a "boxed cake mix"! I did add additional cinnamon and at least 1/4 teaspoon of nutmeg. Didn't have a tube pan, plus my cake mix didn't have directions on the box for one either. I used a bundt pan, baked at 375 for 30 mins. let cool for 10 minutes before removing from pan. A small amount of cake stuck in the pan (this may be because I was out of shortening so I had to use pam to coat). Very Moist and Very Flavorful. Topped with Butterscotch Sauce II recipe.

Tortellini Pesto Salad

DELICIOUS! I didn't even wait for this salad to get cold before eating a small bowl! I followed the recipe as stated except for the olives (didn't have any). Also, my frozen tortellini cooked in 3-4 minutes.

Strawberry Spinach Salad III

Bland. I felt the oil took over in this recipe. I didn't toast my sesame seeds and scaled this back to 3 servings. Added mandarin orange slices and left out the dry hot mustard. If I try this again, I will cut way back on the oil or use EVOO.

Caramel Chocolate Corn

This caramel sauce was DELICIOUS!! Instead of placing in paper bag to mix I used a bowl (but this sets up quickly so had to mix fast)! Did not place in microwave, but oven at 300 for 8 minutes on parchment (and it wanted to stick). I did not use microwave popcorn. Instead of milk chocolate, I used 2 cubes of semi-sweet chocolate bark. I drizzled white chocolate over this popcorn after the photo was taken! Make sure to store (if it does all get eaten after it comes out of the oven) quickly so the popcorn doesn't dry out. I will buy a premium popcorn to make this again.

Cinnamon Popcorn

If you LOVE cinnamon you want to try this! Very tasty! I scaled the recipe back to 4 servings. In this case (and I suspect with 16 servings) you may want to make *double* the caramel sauce if you want *every* piece of popcorn covered. I did not use microwave popcorn. I feel a premium popcorn may help this to have the best quality all around. My popped corn seem to get smaller after putting on the caramel and baking in the oven. Don't over bake in the oven, mine took less time than the recipe stated.

Blueberry Bread I

DELICIOUS! I used fresh blueberries from my garden, added 1/4 teaspoon cinnamon, 1/8 teaspoon nutmeg, used 1/2 brown sugar and 1/2 white. Before adding my blueberries, I coated them in a small amount of flour to keep their shape when adding to the batter. I hand stirred in the berries. My batter was very thick! This bread rises high due to the amount of baking powder used, so make sure your oven racks are spaced apart well. I made 3 mini loaf pans and baked for 25-35 minutes. Very moist and flavorful!!! Will make again.

Stromboli Bites

I have several variations of the stromboli recipes from this site. For time purposes, I let my dough thaw on the counter wrapped in saran wrap sprayed with pam. I do NOT use the cooked ground sausage in this, it makes it way to greasy. For easy clean-up of the flour I wet the counter with a damp cloth and lay 2 pieces of saran wrap onto it. Add a small amount of flour on plastic and roll dough. Then just pull up the plastic with no flour mess on the counter! For a quicker baking time I cook at a higher temperature, 375 for 15-18 minutes. Served with Pizza Sauce I as a dipping sauce. This is a regular Friday night "pizza" at our house (even my kids can make it)! It cost less than a pizza chain's pizza!

Pizza Sauce I

VERY TASTY!...but I accidently put in the wrong herb! I didn't know it until hubby said how GREAT the sauce tasted, and not to buy jarred sauce anymore. Told him I went and picked the basil out of *his* garden. I told him where I got the herb and he said I used MINT instead of BASIL!!! Guess it was a great mistake flavor-wise for my family. (See the mint in the photo) However, I will make this again with the basil to see if it truly is a 5* recipe!

Bonnie's Fruit Dip

Although this recipe has a nice light flavor, it was lumpy from the cream cheese. I let the cheese come to room temperature to soften, placed in a bowl and *tried* to blend until smooth with the other ingredients. It was a named brand cheese and it did not blend well. I ended up with pea-sized cream cheese bits in the dip. When I make this again, I will try to whip the cream cheese *alone* before adding the other ingredients.

Mashed Potato Salad

DELICIOUS! This tastes like a baked potato with the works!! I followed the recipe as stated with the exception of the raw onions (used onion power). The green pepper is unusual in many potato salads I've made but this is a nice addition *however I will saute with the pepper and onion prior to placing in the potato salad*. With the salad being warm I didn't like the crunchiness of the veggie. I topped with a handful of chopped bacon and a sprinkle of paprika.

Chocolate Eclair Cake

Nice and light dessert . Although I used the ingredients for this recipe I did make modifications for prep, serving size and refrigeration time. I halved recipe, used a standard sized loaf pan. Using kitchen shears, I did cut some of the graham crackers to fit the pan. I dipped the graham crackers into milk before placing in the pan to soften up slightly. I did not put the chocolate on the dessert until after it set up. Instead of refrigerating for 4-24 hours, I froze for 2 hours. Drizzled chocolate sauce upon serving. I used french vanilla pudding, next time I will use cheesecake flavor. I think I will also add a cooled layer of chocolate upon the second graham cracker layer, then refrigerate until firm, then add the next layer of pudding and top layer of graham cracker.

Roast Sticky Chicken-Rotisserie Style

Favorful and Moist! I used 4 frozen chicken breasts, seasoned one side, placed in crockpot with 1/2 cup of chicken broth and cooked on high 2 hours, flipped chicken and seasoned again, cooked on low 2 more hours. Picky 12 year old loved this (I did cut back on the cayenne). ***UPDATE- I did make this recipe exactly as stated and my family LOVED it! It was so flavorful and moist..will definitely make again and again! Next time I am putting the chicken in the crockpot instead of heating up the house for 5 hours.

Broiled Tilapia Parmesan

AWESOME....and I'm not really a seafood eater!! This was quick, easy, great tasting and economical. A special thanks to the recipe exchange foodies who suggested I give this recipe a try! Even my very picky 12 year old ate this! Looks like Tilapia will become a regular here.

Hawaiian Chicken Salad

I halved this recipe to use up some leftover chicken. I used green and purple grapes since the recipes doesn't state which to use. Next time I will use the purple or red grapes only cause they add a touch of sweetness. I added chopped walnuts instead of almonds, served on large fresh spinach leaves on top of pita triangles.
