Beef or Chicken Marinade

Very Moist! I halved this recipe, used chicken tenders and used agave nectar in place of honey. Only marinated for 1 hour and still had good flavor. This was a nice, quick and used ingredients I had on hand. Will use this again.

Garlic Potatoes Gratin

Very Good! The gouda really adds a nice creamy texture to this dish. I halved the recipe and baked in a loaf pan. I was able to slice the potatoes evenly using the mandolin about 1/4 inch thick. I sprinkled the cheese evenly through 3 layers, then the cream over the top. I baked covered with foil the first 45 minutes. Uncovered for 15 minutes. Will make again.

Dilled Summer Squash

Hubby really enjoyed eating fresh squash from his garden! Make sure not to cut the slices too thin and cook for the full 15 minutes or the squash will be mushy. I cut 1/2 inch slices and cooked only about 10-12 minutes.

Salad with Prosciutto and Caramelized Pears and Walnuts

Absolutely DELICIOUS!! This salad is comparable to a few I've had in some of the best restaurants in the Washington D.C. area!! Light, refreshing and a great combination of flavors. My only substitution was onion powder in place of the raw onions (personal preference). I'm sure this did change the *bite* of the salad slightly. Do not skip the prosciutto because the salty/sweet combination is great with the asian pears! My pears did not caramelize to a nice brown color, so I added a tablespoon of organic agave nectar to help them turn a more golden color. Make sure not to slice your pear too thin because they will become overcooked easily. I will definitely be making this salad again for friends and family functions.

The Most Incredible Garlic Bread

I had a half a loaf of french bread to use up and made pasta for dinner. This bread was really good. After reading reviews, some had trouble with mixing the olive oil and cream cheese. I decided to drizzle oil on the bread first, then spread the mixture and broil. Since my bread slices were small it only took a few minutes on low to melt. I also drizzled a small amount of olive oil and grated parmesan after coming out of the oven.

Tomato Sauce with Sausage

This was good to make for a quick 30 minute sauce. I scaled this recipe down to 8 servings, used ground sage sausage and pureed my tomatoes (daughter doesn't like them). I like adding a bay leaf for additional flavor too.

Fancy Chicken Salad

DELICIOUS! I used leftovers from the Roast Sticky Chicken-Rotisserie Style recipe. I used garlic powder in place of fresh garlic. I did not refrigerate for any length of time, served for lunch. Served with boston bibb lettuce leaves. Will make again.

I LOVE mangos!! Don't buy them very often because of their availability and cost. I used agave nectar in place of honey. Refreshing and DELICIOUS! To thicken it up I would cut back on the milk slightly next time.

Wife Saver French Toast

My son loves french toast and asked for it today for breakfast. I had a small loaf of day old french bread. I halved the recipe, but used 2 eggs. I did NOT refrigerate overnight, just prepared and let sit for 15 minutes to soak. I also mixed the cinnamon in the egg mixture. Skipped the sprinkle of sugar before baking. Served with blueberry and spice sauce recipe.

Blueberry 'N' Spice Sauce

Easy, quick and DELICIOUS! I scaled to four servings and used frozen organic blueberries. I served over Wife Saver French Toast. This would be great over ice cream! Will make again.

Sweet Fried Summer Squash

Simple and tasty. My garden squash are coming in quickly and needed a recipe that was quick to prepare. Added a dash of onion and garlic powder to the flour. However, sauteed in 1 tablespoon butter and 2 tablespoons of EVOO.

Ramen Cabbage Salad

This was good, but will let sit overnight to see if flavors intensify. Additions consisted of shredded carrots, a few slices of green pepper, a handful of almonds. toasted the almonds and ramen noodles before adding.

Spicy! I scaled this recipe back to 6 servings for after school snack. Used 1/4 lb. gound sage sausage and 1/4 lb. fresh country mild sausage from the local butcher. To tame the spiciness, I added 4 tablespoons of cream cheese. Served with tortilla chips.

Cashew Chicken Wraps

I used a sun-dried tomato basil tortilla, provolone in place of cheddar, added 1 leaf of boston bibb lettuce and chopped roasted red pepper, used onion powder in place of raw onions. Quick and tasty lunch!

Lazy Katie's Taco Salad

I used iceburg lettuce in place of romaine, instead of taco sauce I used 2 TBLS of the taco seasoning mix I recipe, 1/4 cup of water and a couple tablespoon of Secret Burger Sauce recipe. Added cucumbers, shredded carrots and sliced green peppers. Served with homemade ranch dressing. YUM!!!

Grilled Tilapia with Mango Salsa

AWESOME Taste! But beware, I used a charcoal grill and my marinated fish caused the charcoal to flame up more than once! I only used the ingredients listed to grill, so be careful. To prevent this fragile fish from falling apart while grilling, I marinated it frozen for 40 minutes. As far as the salsa, I only left out the jalapeno. This was because I served the stuffed jalapeno bacon wrap recipe as a side.

Campfire Veggies

I halved this recipe, used diced red potatoes, vidalia onions, frozen corn and peas, used EVOO in place of butter. Since we grilled this packet on a charcoal fire I triple wrapped the foil, made sure all the veggies were flat in the foil and not heaped up and made sure to dice the potatoes very small. Will definitely make this again this summer and add fresh herbs next time.
