Spinach and Feta Pita Bake

ABSOLUTELY DELICIOUS! Never thought I'd be one of those reviewers who would say "if I could give this 10 stars, I would"...but now I am!!! My only substitution was grilled chopped marinated chicken in place of the mushrooms. I used a whole wheat pita, fresh picked roma's and a sprinkling of shredded mozzarella after baking. I've made *hundreds* of recipes from this site and this is now my favorite....so far ;)

Herbed Buttermilk, Garlic and Parmesan Dressing

This was too tart and tangy for my family! To tone the vinegar, mustard and onion, I added 1/4 teaspoon of white sugar. The dressing was thin and runny. Served over a fresh garden veggie salad. Everyone really LOVED this (especially since the kids only eat ranch dressing) after modifying with the sugar.

Grilled Garlic Potatoes

I used cubed, unpeeled red potatoes for this dish. Parboiled for 5 minutes prior to grilling. Added a splash of olive oil and double wrapped in foil for grilling.

World's Best Pasta Sauce!

Very Good! I scaled to 4 servings, didn't add the ground beef or fennel seed (didn't have), and used fresh ground sage sausage. I only cooked the sauce on low for 45 minutes and my kids LOVED it and asked for seconds. Served with cheese ravioli.

Orange Rosemary Chicken

Very flavorful! I scaled the recipe back to 4 servings and used 3 boneless, skinless chicken breasts. The fresh herbs really make this taste great. I will be using this to top a summer salad or to make chicken salad lettuce wraps!

I grilled these on a charcoal smoker. The recipe is a good base but lacks real flavor. Next time I will added minced garlic and onion and chopped fresh herbs while marinating.

Amish Slaw

Good, Tart and sweet! This is a different type cole slaw with no mayo added. Be careful to add sugar according to taste. Scaled to 4 servings, added grated carrots, cut sugar back by 1/3 cup instead of 1/2 cup, and used only a small amount of minced onion. I was low on white vinegar, so I added apple cider vinegar (thanks to the input of the Exchange). Next time I will ONLY use 1/4 cup of sugar for 4 servings.

Yellow Squash

Quick to prepare and Good! Sliced 1/2" and boiled the larger slices 3 minutes, then added smaller pieces and continued boiling for 5 minutes. Mashed slightly. Watch squash closely after adding milk. Creamy and a nice subtle flavor. Hubby said it was the best squash recipe he'd ever eaten!

Cherry Cream Crescents

BETTER than store bought! I did not use the egg on the inside or out. In place of cherry pie filling, I used seedless raspberry jam in 3 crescents, and apricot preserves in the other 3. I baked at 325 for 14 minutes. Next time I make these, I will spread the cream cheese down the entire length (excluding the tip) of the crescent. The ratio to filling and dough will be more equal. My kids loved these!!! Easy to make and could use other jams/jellies for the filling.

Chicken Kabobs

Very good. I cut my partially frozen chicken breasts with kitchen shears into squares. For the BBQ sauce I used Bubba's Best BBQ sauce recipe. We grilled the chicken and veggies first, then coated with the sauce.

Hot Fudge Sundae Cake

I followed the recipe EXACTLY! The recipe states "No messy clean-up with this one. Just mix and bake in the same pan." This was NOT the case for me. After combining the flour & cocoa mixture with milk in the pan it was extremely thick and did not spread well in the pan. Added remainder of ingredients including hot water. Recipe does *not* state to stir. Chocolate mixture does not look cohesive in the pan. Carefully placed in oven for 35 minutes. After 10 minutes of baking filling overflowed out of the pan. (Yes, it smelled bad). Decided to continue to bake until done. There was *no* sauce to drizzle when I cut pieces.

Orange Whole Wheat Pancakes

Good tasting, but thin pancake. I scaled the recipe to 4 servings and used 2 egg whites. I got 7 3" sized pancakes, so don't think that would make four servings. My batter was thin so I let sit for 5 minutes and it did slightly thicken. Overall the taste was good but this was not a fluffy type pancake. I served with the Homemade Pancake Syrup recipe.

Gelatin Poke Cake

Light and Refreshing! My 15 year old son made this (I tried to supervise) for dad's birthday yesterday! It's didn't quite turn out looking like the photo but it didn't matter. We've tried orange, raspberry and lemon flavored gelatin. It's their favorite cake!!!

Bubba's Best BBQ Sauce

VERY good sauce!! I scaled to 12 servings to try out. I cut back on the chili powder by 1/4 teaspoon. I did not have savory so I did not add it. I cooked on low for 12 minutes. This sauce thickens up nicely when slightly cooled! Sweet, smoky and mild heat. I'm partial to Big Al's BBQ sauce recipe, but this is a nice alternative.

Creamy Rice Pudding

WOW...is this good!! I only eaten rice pudding a few times and don't remember liking them, but this recipe has changed my mind! I made minute rice and let it cool slighty. I followed a reviewer's suggestion when adding the beaten egg to the last 1/2 cup of milk and the slightly cooled rice.Added a few dashes of nutmeg and cinnamon at the end. Good warm or cold! Will make again. *UPDATE* I made this a 2nd time and doubled it, however it did not set up, had to drain off the liquid. Hoping it was a "one time" thing, cause it was so good the first time.

DELICIOUS!! I scaled this recipe down to 6 servings and used freshly picked cherry tomatoes from my garden. After cutting the tops of the tomatoes and removing the seeds, sprinkled with salt and turned upside down to drain. I added shredded sharp cheddar cheese and used onion powder in place of the green onion. These were good at room temperature but even tasted better after being in the fridge. Will make again!
