Spinach and Tortellini Salad

Tasty and filling! I halved this recipe, and used fresh torn spinach, chopped celery and some asiago cheese. Next time I will cut back on the dressing cause it is strong, or I may try an italian dressing recipe from the site to use.

Twice-Baked Mashed Potatoes

Okay another good mashed potato recipe! I didn't add the green onions (didn't have). My only addition to this was 1/2 cup of sour cream. I used a potato masher (instead of a mixer) to mash potatoes, so I had a few lumps. If you want a smoother texture before baking in the oven make sure to use a mixer. I put the remainder cheese on top the last 5 minutes of baking.

Broccoli, Corn, and Green Bean Saute

Good, but somewhat bland. I used frozen corn that I had cut off the cob last fall. I steamed the broccoli in the microwave for 3 minutes in a ziploc steam bag. I topped with the feta when served. I will try this again this summer with ALL fresh veggies.

Lemon Coconut Loaf

I halved this recipe to try it out and it made one mini loaf pan. I baked at 325 for 40 minutes (started checking at 25). To give this a nice tart lemon taste I added 1/4 teaspoon of lemon extract. Please note, this loaf can be crumbly when cutting after it is cooled. I only sliced a few pieces and wrapped the rest to refrigerate to see if it firms up. This is a moist, light and flavorful cake. I served alone or with the microwave lemon curd recipe. Will make again soon!!!

Guess I have to rate this 5 stars since my family ate every bite before I got one!!! I did make some minor adjustments. Used 1/2 ground beef, 1/2 ground sausage. Added 1 teaspoon of taco seasoning mix and did not mix my cheddar cheese into the meat to melt. I only used a handful of corn (kids not fond of) and used fresh chopped tomatoes instead of canned cause that is what I had on hand. I put my chips in a 350 for 5-7 minutes to heat "before" placing meat mixture on them. Will definitely make again so I get to try them!

Richard and Suzanne's Famous Spaghetti Sauce

Okay, Okay..I didn't read the recipe submitter's notes before making this recipe. I looked at the ingredients and had everything and followed the recipe as stated except used only 1 teaspoon of sugar. The end result was a very THIN and runny sauce (not like any sauce I have seen before). In order to make it more like my family likes it I added one 6oz. can of tomato paste. The green chili's give it a very subtle heat. I served this sauce over the Maria's Stuffed Chicken Breasts recipe. Overall, it was a good tasting sauce.

Bacon Feta Beans

Good, but not great. This needs slight modifications...I have a new microwave and my beans did not cook in 3 minutes. Wish I would have tasted one before adding to the pan. This needs more garlic and onion. Next time I try this I will steam fresh beans and use them.

Maria's Stuffed Chicken Breasts

Very tasty...even the picky child ate it! The filling is what really makes this chicken recipe. Next time I will only make 1/2 of the amount of filling since I had a lot left over. Instead of using jarred spaghetti sauce I used Richard and Suzanne's Famous Spaghetti Sauce recipe.

Strawberries and Wine

Needed to use up over ripe strawberries so used a mini bottle of white wine that I used for a main dish. I let this dish sit overnight because I made them late the night before. I felt the wine definitely overpowered the berries.

Emily's Famous Banana Oat Muffins

Good banana and oat flavor, but a bit dry. First off, I'm sure it's a misprint but I put in 1 WHOLE egg, instead of a tablespoon of egg! I subbed canola oil for vegetable oil, 1 cup of all purpose flour in place of 2 cups of wheat flour. For some who may not know rolled oats are old-fashioned oats, not quick cooking. Finally, I added 1 tablespoon of ground flaxseed. The batter was very thick, filled my paper liners 3/4's of the way full. My muffins cooked in 20 minutes and I got 14 muffins. Next time I will try applesauce in place of the oil and maybe a handful of chopped walnuts.

Baby Back Ribs

First off I used the Dry Rub for Ribs recipe and refrigerated for 24 hours. Instead of bottled BBQ sauce, I made Al's BBQ sauce recipe and used it. I followed the recipe as stated but wanted to finish this on the grill. However, the meat was falling off the bone when I tried to place them on the grill. Next time I will only cook 2 hours and then place on the grill to finish off so as to have a nice caramelized, smoky flavor.

Honey Mustard Grilled Chicken

I was looking a a different sauce for BBQ chicken than the typical red sauce and this was it. I used agave nectar in place of the honey. Refrigerated the chicken with marinate for 1 hour prior to grilling. The mustard flavor was strong but easily controlled by adding a tad more agave.

Light and Fresh Dressing

I scaled this back to five servings, used red wine vinegar, canola oil in place of vegetable oil and agave nectar in place of the sugar. I refridgerated for and hour, and served this over cubed tomatoes, cucumbers and fresh mozzarella cheese. Nice flavor

Texas Sheet Cake II

This icing is really what makes this cake. I did add an additional tablespoon of cocoa to the cake mix for a more chocolate flavor. Make sure to sift your ingredients so you don't get any "white" specs in your cake or icing. Although this cake is good at room temperature, it's even better refrigerated overnight and served cold.

Dry Rub for Ribs

Sharese's Spaghetti Salad

I halved the recipe and omitted the olives. Added extra parmesan cheese and a handful of chopped pepperoni. I like to save about 1/4 cup of dressing and coat before serving. I did use spaghetti but will try this with mini sea shells next time and chopped red roasted peppers.

Tart Lemon Ice Cream

My family thought this ice cream had a nice texture and strong (not too strong) lemon taste. I did use a small lemon and a my microplane did zest my lemon in tiny bits so I didn't need the food processor step to mix the sugar and zest. Next time I will use only 1 half of the lemon juice in this recipe. I did take it out of the freezer and let sit at room temperature for about 10 minutes before scooping. Very nice color.

Stuffed Strawberries

I think these tasted best after being refrigerated. Instead of criss-crossing the cut on the point of the strawberry, I cut "out" a small triangle wedge before putting in the cream. This was much easier that pulling the strawberry open to get the cream in..plus then it didn't try and squish out. I used orange extract in place of the liqueor.
