Country Fried Steak and Milk Gravy

Reviewed: Nov. 5, 2008
Tasted good with minor additions. Added garlic powder and paprika to the flour mixture. Used canola oil in place of lard. I also let my steaks sit for about 10 minutes before frying to try and keep the breading on. My family really liked the gravy, especially with mashed potatoes. Some of my steaks were a little tough, so next time I will cook them in the crockpot.

Acorn Squash Slices

Reviewed: Oct. 25, 2008
These were good and not too sweet. Just make sure to cut the slices evenly for even cooking. Some of my thicker pieces weren't quite done.

Good, but too sweet as written. Next time will cut back on the sugar.

Home Style Macaroni and Cheese

Reviewed: Oct. 13, 2008
My family really liked this with additions!!! After reading the reviews, many stated this was a bit dry. I added 1/2 cup of cheese con queso dip with japelenos and 1/4 cup of sour cream. Will definitely make again.

Sweet Restaurant Slaw

Reviewed: Oct. 13, 2008
This did taste good! I cut back on the sugar by 1/2, instead of using bagged slaw I used my food processor for the cabbage and carrots.

Vicki's Hush Puppies

Reviewed: Oct. 13, 2008
Very Good! I cut back on the sugar and used onion powder in place of minced onion. I used a small cookie scoop spayed with pam. Batter made about 18. Next time I will cook slightly longer and my centers were a bit gooey.

Lemon Cream Cheese Frosting

Reviewed: Oct. 1, 2008
Deliciously sweet! I scaled the recipe down to 16 servings. Added 1 tablespoon of fresh lemon zest. Only used 2 drops of yellow food coloring to give a better yellow color. I used this recipe to fill and top the Lemon Gold Cake recipe.

Lemon Gold Cake

Reviewed: Sep. 30, 2008
I used all purpose flour instead of cake flour because I didn't have it on hand. The cake was moist and flavorful. I filled and topped with the Lemon Cream Cheese Frosting recipe.

Kickin Stuffed Peppers

Reviewed: Sep. 30, 2008
My peppers were very small so I scaled the filling down to 3 servings. Quite time consuming to remove the seeds. I made sure to wear food safe gloves. Hubby LOVED them! Due to the small pepper size, he said they were wicked hot!

Bellyful of Barbecued Bananas

Reviewed: Sep. 30, 2008
I used overly ripe bananas so they were a bit too fragile. Very good warm!

Decadent Pumpkin Muffins

Reviewed: Sep. 26, 2008
I wish these muffins would have tasted half as good as they looked! I scaled the recipe to 12 servings and followed using all the ingredients listed. My only change after scaling was to use 1/8 teaspoon of ground cloves instead of 1/4. The spices really overpowered this muffin to the point that no one in my family would eat them (and we all like pumpkin)!

Best Chocolate Chippers

Reviewed: Sep. 25, 2008
Overall, this was a dry cookie. I scaled to 24, used canola oil in place of vegetable and only a handful of crushed walnuts. I ran out of time and had to refrigerate the dough overnight before making. The next day, I let dough come to room temperature before baking. My first tray was 1 1/2" cookies baked for minimal time stated, bottoms came out too brown. Next tray was 2 1/2" cookies and these were better. I placed in an airtight container overnight but no difference in texture.

Angel's Yummy Bruschetta

Reviewed: Sep. 24, 2008
I scaled this recipe back to 6 servings and used 1/2 loaf of french bread. I used fresh garden tomatoes and fresh herbs in the recipe instead of dried. Before broiling the bread slices, I drizzled with EVOO. Topped each piece with freshly shredded mozzarella cheese. Hubby and I ate every piece for lunch! Will make again.

Steve's Chicken Noodle Soup

Reviewed: Sep. 24, 2008
I halved the recipe but tripled the chicken broth. The egg noodles called for in this recipe is too much, so I had to add more broth. This needs a lot of seasoning because it doesn't have much flavor.

Kimberly's Meaty Meatloaf

Reviewed: Sep. 24, 2008
My family really enjoyed this meatloaf and have already ask for it again! To add moisture and flavor I added 1/4 cup of chili sauce, 1/2 tsp. dried parsley and basil. I baked the meatloaf to a golden brown, without the tomato sauce on top . The last 10 minutes of baking I topped with Al's BBQ sauce.

Garlic Mashed Potatoes Secret Recipe

Reviewed: Sep. 24, 2008
I scaled this recipe down to 8 servings. Added fresh parsley and chives and a dash of milk. My family does not like smooth mashed potatoes so I left them quite lumpy. A good side dish on a chilly autumn day.

Salmon Patties

Reviewed: Sep. 23, 2008
My family LOVED this recipe!! I scaled the recipe down to 5 servings. My only substitution was using fresh cooked salmon in place of canned. This will definitely be made in our house again since there was no fishy taste. Served with thousand island dressing.

Swedish Meatballs II

Reviewed: Sep. 19, 2008
This rating review is for the meatballs *only*. After reading reviews from Swedish Meatballs I & II, I made the meatballs from this recipe and the sauce from the other. Served over steamed veggies and egg noodles. My family loved this combination! I printed out the combined recipe to use during the winter months.
