Spaghetti Torte

After reading the reviews of others, I took a few precautions to make sure it didn't turn out too dry. I used 2 cans of diced Italian tomatoes without draining and 3 whole eggs. It turned out great! I don't know if I would have even had trouble anyway. I also poured some store bought red sauce on the plate and served the wedge on top. It made for a pretty presentation. I didn't have any ricotta cheese on hand so I substituted fat free cottage cheese, and it worked great. The best thing about this recipe is the ability to throw in whatever you have on hand. I added some onions and garlic. Next time I plan to try adding artichoke hearts, spinach, and black olives!

Lemonade Pie III

I had been looking for this recipe because a friend of mine used to make this all the time. So easy and so good! I always have a difficult time finding 6 oz frozen lemonade so I end up getting the bigger size (12 oz?). I always use all of it anyway, and I don't think it is too tart.

Sweet Potato Balls

I don't know if it is just me, but I could not shape these into balls to save my life. I ended up just making regular sweet potatoes with this mixture. They were good, but I was disappointed that I couldn't make the balls.

Cooking Light magazine's Mexican Chicken Casserole

This was pretty good. I added extra chili powder, but I wasn't paying attention to how much I shook in the pan so it was way too spicy. :) I didn't have the mushiness problem that others had. I used flour tortillas and block cream cheese. I don't know if that helped. Next time I think i will leave of the crushed chips on top too. I don't think that it added that much to the recipe.

Too good to be low fat!! I don't care for cherries so I left the filling part off, and it was still great!! I also added a dash of cinnamon. I will be using this recipe for every cheesecake I make!!

Guinness® Corned Beef

My husband and I did not enjoy this recipe. I did use a Coors Light rather than Irish stout beer so that might have had something to do with it, but I don't think that could be the whole reason. The corned beef was VERY tough. I will probably just stick to the regular way of fixing corned beef from now on.

No-Bake Granola Bars

YUM!!! This is really, really good!!!The first time I used mini chocolate chips and it was too much. I might cut back on the amount of chocolate chips when I use them again-- or use regular size chips. The next time I added an extra cup of raisins and left off the chocolate completely! I added cinnamon both times, and used honey too as the other reveiwers recommended. If you leave out the chocolate, it is super easy and still really good!!

Hot Pizza Dip

This is so good!!! I will definitely make this again and again! :) I served it with Italian Flat-out Bread (by the pita bread in the grocery store) and cut them into fun shapes. It was just like dipping the crust!!

Chocolate Chip Cheese Ball

This is an absolutely delicious cheeseball!! Everyone who sampled it loved it. I agree with some of the previous reviews concerning the consistancy. It was not even remotely thick enough to shape into a cheese ball right away. I froze it over night in a bowl. The next day I wrapped it in pecans and put it into the fridge to let it thaw. Then I kind of molded it into a better shape. I did use 1/3 fat cream cheese and light butter so this could have been the reason, but I didn't soften either of them in the microwave. I tried adding another 1/4 C of confectioners sugar to help thicken it. Although it helped some, it wasn't enough. I also added a dash of cinnamon. Minus the consistancy problem, this is a great cheeseball that I highly recommend!!

Pork Roast with Ginger Peach Glaze

I have made this recipe 3 times--twice with pork chops and once with a pork loin. Each time it has been excellent! The last time I made it with the pork loin for several friends and they raved about it! Very Simple!!
