MMMMM... Brownies

I am gluten free and always looking for good recipes that can be converted easily. These turned out delicious and my whole family loved them! Imade these very quickly, but instead of all-purpose flour, I used the Bisquick gluten free baking mix. I also used dark chocolate chips because I prefer dark chocolate. Very good and rich tasting, without being so sweet- yeah!

Spinach Lasagna III

This was the most flavorful lasagna that I have made and my husband raved about it. I only had about half the mozzerella cheese on hand and it was still great! I also used rice noodles to make it gluten free and it was so delicious! The left overs were even better!

Middle Eastern Rice with Black Beans and Chickpeas

my husband and I really enjoyed this - we had everything on hand except the cilantro, parsley and pine nuts and it tasted great without them. However next time, we'd like to add the pine nuts and some onions cooked with the turkey

Acini di Pepe Salad

This is the only salad with fruit that my husband will actually request - delicious! This recipe is a little different than the one I had gotten from my grandma, which included 3 eggs instead of 2. I also have never chilled the pasta overnight before adding the other ingredients. It works just as well to mix it all together and chill it for several hours.

Mixture for Meatballs, Meatloaf or Burgers

This tastes really good and we loved it for meatballs. However, I tried using it for hamburgers on the grill and they kind of stuck to the grill and fell apart. They still tasted wonderful when I scooped up the pieces and put them together on a bun. The leftover scraps were used in spaghetti sauce, which tasted great!

Creamy Broccoli Casserole

This was really runny when still hot and after sitting out for awhile began to become more solid. So, don't plan on serving it as soon as it comes out of the oven. The taste was wonderful and everyone loved it!
