Streusel Apple Coffeecake

Reviewed: Nov. 26, 2008
The only thing I would change about this recipe is to add a bit more apples and not dice them so much but rather leave them more like an apple pie filling. Hint: do not use overly ripe apples as it takes away from the actual apple flavor.

Tiramisu Layer Cake

Reviewed: Apr. 6, 2008
This cake was absolutely delicious and was a HUGE hit as my friend's birthday cake. The reason for the 4 stars instead of 5 is that everyone thought it was the best "coffee flavored cake" as opposed to Tiramisu. It was pretty much just a layer cake. I am a huge Tiramisu fan and the texture has to be perfect. I would definitely make this again, however, I would probably double the mascarpone filling and double the amount of coffee that soaks into the cake...and then I will present it as "Coffee flavored cake".

Monkey Bread II

Reviewed: Jan. 12, 2008
I made this without a bread machine. I proofed the yeast first and then I used my hand mixer with the dough hooks to complete the mixing. I also had extra brown sugar sauce but I poured the remaining back into the bundt pan and then flipped it over. I also drizzled the top with cream cheese frosting--I didn't use too much because it was just a drizzle, I used 4 oz cream cheese to 1 cup confectioner's sugar and 1 teaspoon vanilla. This monkey bread was so moist and delicious--like it was made professionally. My daughter requested it for a birthday cake. 5 stars, this is definitely a recipe we will make again.

Pumpkin Dip

Reviewed: Dec. 21, 2007
I will agree with the other reviewers on this one. You must be making this for a pumpkin-adoring crowd. My family likes and some love pumpkin pie but they each just had a couple bites and because it's consistency is very saucelike it's an unfamiliar texture vs. flavor, if that makes any sense. It does look beautiful in the carved pumpkin and does tastes better with apples than with ginger snaps (too overbearing) or graham crackers or any other cookie (we tried plenty). The only problem is keeping the apples fresh enough to look good if it is going to be used as a centerpiece or appetizers. The good news is, I took the dip and added 3 eggs, poured into a graham pie crust & baked for about an hour at 325, refrigerated overnight and voila--pumpkin cheesecake that might be more to people's likings. So it didn't go to waste.

Gingerbread Men

Reviewed: Dec. 21, 2007
These were the most perfect gingerbread men cookies I have ever made for my little ones. The taste wasn't so overwhelming and the texture was perfect. This is definitely my new gingerbread recipe. I don't care so much for molasses so this is perfect.

Smothered Green Beans II

Reviewed: Dec. 19, 2007
This was a really good change from your average green bean dishes. The first time I made it using the brown sugar and it was perfect. Then I realized that by omitting the sugar and cutting down on the Worcestershire sauce, this could be a very tasty low-carb dish. So that's how I make it now for my self. If I were to make it for anyone else or bring it to a potluck I would definitely bring the sugar back!

Grandma's Green Bean Casserole

Reviewed: Nov. 23, 2007
This would have been way better if the recipe called for fresh or frozen green beans. It had a lot of potential, but the taste of canned green beans was so prevalent. My suggestion is to substitute the canned beans for fresh or frozen. The sauce and topping was, however, very yummy.

Double Layer Pumpkin Cheesecake

Reviewed: Nov. 22, 2007
This was absolutely one of the greatest deserts I have ever made! I made a mistake and forgot to add the eggs, so I had to scoop out the batter from the pie shell and mix them all together so it wasn't layered. Everyone loved it! I will make this one over and over again. YUMMY.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Nov. 22, 2007
Really good. These were super delicious the next day. The only thing is that my first batch cooked exactly as explained, turned out too brown on the bottom, so I cut the baking time down a couple minutes--which meant they were too soft to eat right out of the oven, but were absolutely decadent the next day. I will definitely make these again if I want chocolate chip cookies! By the way--the batter was too die for!

Tuna Curry in a Hurry

Reviewed: Nov. 10, 2007
I was looking for a quick tuna recipe that I could whip together with canned tuna. I was hoping for something that didn't taste so "canned tuna". I'm glad I stumbled upon this! Tastes so gourmet! I will definitely make this again. Great stray from your daily tuna!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Nov. 4, 2007
These were really delicious. I don't keep shortening in my pantry so I swapped for more butter and it turned out awesome. They smelled so good when they were baking but honestly, the next day, these turned out to be some of the most delicious cookies ever! My husband suggested a little bit more oatmeal the next time around though, we'll try it and see how it goes!
