Fresh Pineapple Upside Down Cake

This cake turned out exactly as I'd wanted it to...Light, moist tasting and not too too sweet. I substituted canned for fresh pineapple and ran out of butter so threw in some margarine to make the full 3/4 of a cup required. Also added a bit more pineapple juice because the batter didn't seem wet enough (used about a cup in total). None of this mattered though. I made it for a birthday party and everyone there raved over it. This is a simple, easy, classic cake that brings me back to my childhood. Will definitely make again.

Bryan's Sweet and Hot Tomato Pasta Sauce

I often use just plain tomato sauce instead of tomatoes+tomato paste but it doesn't matter...this sauce is off the hook! It's a part of my regular meal rotation now. I usually make it with sauteed red/green/yellow peppers and onions. Thanks for this delicious recipe.

Lentil Soup

This was really good and so comforting in the cold weather. I used canned diced tomatoes and a veggie bouillion cube, and I increased the spices a little, but other than that followed the recipe. This is a great basic lentil soup. Will definitely make again.

Easy Quiche

Surprisingly good. Honestly, I only made this because I had the ingredients sitting around and needed to use them up before they spoiled, but I was pleasantly surprised. I sauteed fresh broccoli with onions and garlic instead of using frozen, but other than that I followed the recipe. I don't know if this was intentional but the biscuit mix sort of raised to the top making a delicious crust over a light eggy filling. Loved the texture.

Zucchini Tomato Pie

This was a really yummy and attractive side dish. I made a few changes as per other reviewers' suggestions...sauteed the zucchini, onions and really good garden tomatoes in olive oil with plenty of dried basil, oregano, salt & pepper. Also added a cup of old cheddar cheese to the mix, then sprinkled some on top and put a few thinly sliced tomatoes on top as well. The result looked and tasted great. Loved the texture. This is a simple recipe but there's a lot you could do with it...I'd love to try it with mexican spices another time. Will make again.

Four Cheese Macaroni

Look no further...I certainly didn't...I've tried several other recipes with moderate success over the years but this one is it...I will never need another recipe for baked macaroni & cheese! This is beyond delicious and incredibly easy. I use one egg and the texture was perfect. The egg makes it kinda like the macaroni pie I've had in the Caribbean but this is much richer and creamier. I had to omit the muenster the first time I made this since, oddly, my local supermarket didn't have it, and it was still off the hook. A definite OCCASIONAL pleasure given the high calorie count but nontheless...better than any restaurant version of this dish I've had.

Baked Ziti III

So good! I used veggie ground round instead of beef but it was still fab. The sour cream is a must. I was skeptical since this is simpler than the baked pasta recipes I tend to like, but I will definitely be making this again. I used Barilla's pasta sauce with mushrooms (and sauteed some onions with it) for the base and it was great like that but I'd also love to try it with my own bolognese.

Homemade Black Bean Veggie Burgers

Great basic bean burger recipe. I would increase the seasonings next time, and maybe add some corn, but the texture was perfect. I recommend serving them like I did with chipotle mayonnaise...So yummy.

This really is a great, easy-to-make martini. Have made this for friends/family many times, adjusting juice/alcohol ratios slightly to individual tastes, and gotten lots of compliments. I use Malibu Rum for this one.

Bermuda Spinach Salad

Not that this recipe needs any more accolades, but here's one more...Love, love, love this salad. Have served it for friends/family/boyfriend received raves every time. I use baby spinach and omit the celery seed (didn't have any the very first time and found it over-powering when I used it) as well as the bacon (don't eat pork). My boyfriend didn't believe I'd made the dressing myself! Thanks for the awesome recipe!

Fresh Broccoli Salad

This was really, really tasty. I'm not big on raw broccoli but had the ingredients laying around and gave this a chance. It wasn't too crunchy or soggy...great texture actually. I omitted the bacon (don't eat pork) but loved the flavor/texture of the fruit and nut component. Will make again.

Emily's Excellent Taco Casserole

I give this 4 stars because it's super easy, super quick, all-in-all a perfect dinner idea for the super-lazy (or busy). It's very hearty, filling and, especially if you don't slouch on the toppings (I used avocado, frozen corn, lettuce, salsa and sour cream mixed w/taco seasoning) tasty. The quality of chili and other ingredients you use can make or break this one, obviously. I used amy's organic chili.
