Cheese Blintzes

I was extremely excited about this after reading all the glowing reviews but I was ultimately disappointed. I followed some tips and added egg and sugar to the cream cheese mix and it was ok, kind of a simple cheesecake mixture. I also didn't find it too messy or difficult. The thing that for me let it down the most was the white bread...I was skeptical but based on comments I was hopeful that the bread would undergo some kind of transformation which it did tasted like cheesecake mix wrapped in white bread sprinkled with cinnamon sugar. And whether you like them or hate them I think to call them blintzes is extremely misleading as they are not even close to the real thing.

Brown Sugar Pie I

I had an extra pie crust made so I decided to try this. Based on other reviews, I cut the recipe in half to make one pie and the amount was perfect. When I opened my can of evaporated milk, I found it had gone bad so I used cream. Everything came out perfectly, including the consistency (I left it in the fridge for a while before eating) not too sweet (at least for me) as others had said. I did add pecans on top which was a great addition for a butter tart fan like me. I gave this five stars because not only does it taste good but it was soooo easy as to be virtually idiot-proof.

Dark Chocolate Cake II

Very easy, fudgy, super moist (maybe even a little sticky). No need to change a thing. After serving it to a friend she has ordered one for her office party!

One Minute Chocolate Icing

I halved the recipe which was plenty to cover one 9-inch round cake. I used margarine because it's all I had, used half white sugar/half icing sugar as recommended and whisked by hand. I find it to be like a chocolate syrup that sets but easy and tasty.

Beer Roasted Lime Chicken

Just made this, also with a few adjustments. I rubbed the chicken with extra spices on top and under the skin, I added lime slices under the skin too and it was citrus-y enough for me. Squeezed some lime juice and threw a couple garlic cloves in the beer can. Can someone explain to me what the beer does? I didn't detect any beer flavour. I also didn't cover it at all and it came out nice and crispy. Based on all the reviews I put it in for longer, 2 hours, which turned out to be a little too long as it was a bit dry. Special thanks to the girl who expalined what to do with the beer can in an earlier review - I didn't know either!
