Broccoli and Tortellini Salad

I have made this numerous times for various family and friends and it's always devoured and I'm always asked for the recipe! The only changes I make are doubling all sauce ingredients except the sugar (I keep that at a little less than 1/2 cup) and I blanch both the onions and the broccoli for 30 seconds - 1 minute and I do leave 1/2 of the sauce off until right before serving. I'm still giving this five stars because those are minor changes. The true spirit of this awesome recipe is there. THANK YOU. I would never have come up with this myself.

Bean Soup With Kale

Loved it... used half garlic because of my 5 year old but will used the full amount next time. Also used canned tomatoes with italian seasoning since the tomatoes didn't look appealing. Not a fan of kale but this was delicious!

Pumpkin Bread IV

Only change was replacing the 1 1/2 cups of oil with 1 1/2 cups of pure applesauce. The four year old LOVED them as did hubby and I. Great recipe. I made 29 cupcakes and one loaf from this recipe. I used my new silicone pumpkin muffin pan for 12 of the cupcakes.

Pumpkin Coffee Cake

This was absolutely wonderful. I didn't give it a five because I followed the suggestions of the other reviewers and I made one change myself. I doubled both the pumpkin and the toppings. I also used even ratio mix of whole wheat and white flour. I may cut down on the cake mix sugar next time since I'm doubling the toppings. Wonderful. Excellent. Loved it!

Baked Zucchini Chips

Thank you for giving me another zucchini option! I took a page out of my Sneaky Chef cookbook and made the breading with wheat germ. Also, I didn't have any panko so I used Nature Valley Double Fiber bread and threw it in the food processor. I added parmesan cheese, pepper and the wheat germ and then followed your recipe. I followed the hint of spraying the chips before flipping them.

Sweet Potato Souffle I

I can't give it a perfect 5 because I didn't make the recipe as is. However, after using the tips in the reviews, I would give it rave reviews. I made it for the T-giving Potluck at work yesterday and people liked it and asked for the recipe. Changes: did not add any sugar to the sweet potato mixture, added 1/2 tsp nutmeg and 1 tsp of cinnamon. I din't use coconut.

Autumn Cheesecake

I needed a recipe for a contest at work and I read the reviews and saw that someone won an at-work baking contest with this recipe. So I picked it and I also won First Place! I followed the directions in the reviews: doubled the cheesecake and crust portions of the recipe, added brown sugar and cinnamon to the apples and microwaved them for 2 minutes, placed about 1/3 of cheesecake mix into pan then added the apples, and then poured the remainder of the cheesecake mix on top. Then, I added 1/2 stick melted butter and brown sugar to taste to the remainder of the crust ingredients and sprinkled on the top. It was delicious!
