Breakfast Pies

Reviewed: Oct. 12, 2010
What a GREAT idea for freezing and popping in the microwave for quick breakfasts!!! Actually that is the basis of my 4 star rating. The recipe was not bad but did lack a little flavor to us. We are not big bread eaters, though. My 5 yr old is...he ate 4 of them!!! I used flakey biscuits and peeled them apart into two's - maybe next time I will peel three layers away to make thinner shells. I also think I will mix cream cheese in with the sausage. Pretty good little recipe though! THANKS!

Breakfast Corn Muffins

Reviewed: Oct. 12, 2010
It's hard for me to really rate these based on the recipe alone because I used jiffy mix instead of making the 'cornbread' from scratch. However, these are a really good idea for something different especially for the kids and I will tweak it a little next time to include masking the banana together with PB and using a little more of each to stand up to the cornbread flavor. Pretty good though, Nik.

Cucumber-Avocado Salad Dressing

Reviewed: Mar. 8, 2010
Let me just say that my best friend thinks that I am a domestic goddess for this recipe. ha ha ha It is a very different dressing. Nice and fresh. I personally do not like all the cucumbers in it. It seems to water down the flavor. So I cut them back when I make it to only half or even less. IT does make it quite thick though. I also add cruched red pepper which makes it quite interesting.

Broccoli with Garlic Butter and Cashews

Reviewed: Mar. 8, 2010
My boyfriend and I weren't blown away by this recipe but it was good. So I give it 4 stars because it is a GREAT way to jazz up broccoli and our dinner guests LOVED it. It was different which I loved and the recipe calls for things I would normally have on hand in the kitchen; BIG A+ for that!

These wuz sum good taters!!! The balsamic vinegar was fabulous on there! I did take another reviewers advice and bake it WITH the vinegar on there. Then I took it out and added more, tossed the spuds around a bit and put it back in uncovered. PERFECT!

Chicken Flautas

Reviewed: Feb. 5, 2010
I am sure that alot of people can do fine with the intructions given but my BF is mexican and when I started making these he looked at me like an idiot. So he showed me how they do it: Put the tortillas in the microwave for a minute to soften them. Then put the chicken mixture in there. He said not to put cheese but I did because EVERYTHING is better with cheese! Right? So then you just roll them up like a rug and fry them in the hot oil until browned and crisp. I am still giving this recipe 3 stars because the taste of the chicken mixture was good. BTW - I used taco seasoning instead of Cumin (I didn't have any). The way I did it was MUCH easier, not so rushed and my picky family loved them.

Becca's Taco Soup

Reviewed: Jan. 15, 2010
Becca You ROCK! This soup is awesome! I did change it a bit from some of the reviews but I feel sure that even if it is prepared just as you have it that it would be just perfect. The changes I made were to add beef broth instead of the tomato sauce and I pureed canned tomatoes instead of tomato juice so it would have a heartier consistency. I also added 1/2 the taco mis to the burger when I browned it and then used the remaining as your recipe instructs. Then I made a couple of servings of white rice and added it in at the end. So it was quite a bit thicker than your recipe would make, I'm sure but we all ate it until we were about to pop. Thank you! I am sure I will make this alot. By the way it's really easy and you would generally have all of this stuff on hand in a typical kitchen anyway which is MAJOR bonus points for me. I HATE having to prepare and shop especially for a recipe. BECCA ROCKS!

Chicken Tacos

Reviewed: Jan. 13, 2010
I am giving this recipe 4 stars because while the flavor itself wasn't out of this world the versatility is great. Besides it doesn't need to be super flavorful when you are going to top it with sour cream, salsa and who knows what else. We put the left-overs on rice the next day and it was like a chinese dish because of the sweetness of the chicken. It was pretty good. My "BOOs" liked it too :)

Mexican Casserole

Reviewed: Jan. 13, 2010
I just want to say that I LOVE YOU for submitting this recipe. My picky mexican husband loved it. He gave it 8 stars out of ten. So I guess that would translate to 4 out of 5 that they use to rate on here. I think the only reason he didn't give it a 10 is because he is a tomato snob. He only likes them in certain things. So next time I will just chop them up finer and I think all will be well. The only changes I made was to salt the burger when I was cooking, I sauteed some onions and added them in last and I used black beans for that mexican flavor. Not really sure what Ranch beans are... I will DEFINITELY make this alot and MANY MANY thanks for something so quick and fuss-free to make - I have 2 small kids. You SO ROCK!

New Orleans Corn Bisque with Smoked Sausage

Reviewed: Oct. 23, 2009
Well I TRIED to make this as is but after I started realized I didn't have corn. so I threw in some peas. STILL GOOD! I would like to try it with corn though. My family all gave this a 10 and even my four year old wanted MORE. I will defininately make this again. One thing I really love is that it is cheap to make and with stuff you most likely always have around the house.

Popcorn Cake II

Reviewed: Oct. 22, 2009
I love the idea of this cake! It is so versatile and you can use it at ANY holiday function. Plus you can make it colorful so kids love it as well. I made it for a Halloween potluck and used Candy Corn and Peanuts. Then I pressed it into a bowl, drizzled orange frosting on it and made it look like a pumpkin. I melted and molded chocolate to make a stem - so it was all edible. You could use any mold and the possiblities are endless with this one. Almost everyone asked me for the recipe - And it's SO SIMPLE! AWESOME!
