Spinach Pancakes

This recipe was great! I made a few revisions to suit my dietary restrictions and personal taste. To make it gluten free, I used 2 tbsp of coconut flour instead of all purpose and added an additional egg. I also added 1 tbsp of garlic powder, 1 tsp of cumin, 1 tsp of hot chili powder and a splash of vinegar. I baked mine at 350 for about 30 minutes instead of pan frying. I'll definitely be making these again!

Cake Mix Cookies IV

Gotta love these, especially for ease! I make them with a french vanilla cake mix and add 1 tbsp on vanilla extract. Most delicious sugar cookie ever.

Easy Decadent Truffles

Easy to make and very delicious! The mixture was a bit hard to work with, but maybe this is normal. I have never made truffles before so I am not sure. I just stuck the mixture back into the freezer when it got too soft. I added some dutch processed cocoa powder to the mixture to add more depth of flavor, and rolled in that as well. Scrumptious! Will be experimenting with different flavor combinations for Christmas time! Thank you for sharing!

Flourless Chocolate Cake I

I have a friend who is allergic to glueten, so for his birthday I made this cake for him. Let me tell you...very rich, very indulgent, and very delicious! I served it a with an itty bitty scoop of vanilla bean ice cream on top (trust me on the itty-bitty part, this cake is decadent enough by itself) and everyone loved it. Next time I make this, I might try adding in 2 tbsp. of ancho chile powder to try out the spicy-chocolate flavor combination that works so well in chocolate bars. **UPDATE** There were left overs from the birthday party, so we put the cake in the fridge. The next night we chopped the cold cake into cubes and mixed them with the vanilla ice cream that was left over. It was fabulous. I think I actually preferred the cake cold!

These were really good. I made two small batches. One batch was made as written, and was fabulous. The second batch I decreased the sugar by 1/2 and found that I still loved them. So in the future I'll make these with 1/2 the sugar (read: so I don't fill so bad filling them with goodies!). I've already got it in my head to make these with some grated lemon rind, then fill them with lemon curd (yum). Thanks for a quick, easy, and delicious idea.

Beth's Spicy Oatmeal Raisin Cookies

Well I've had a hankering for oatmeal raisin cookies for about a week. Tonight, I just HAD to have some. Since I'm only cooking for myself, it would have been dangerous to make all 36, so I scaled the recipe to 12. I WISH I had made all 36 so I could have shared - these were SO good. I did make a few changes. I added 1 tsp molasses, used turbinado sugar, flax seed rather than an egg, and allspice instead of cloves. YUM

Spring Lime Tea Cookies

First let me say, these were really really good! An excellent change of pace from the standard lemon cookie. I skipped the glaze, and consequently wished I would have put more lime juice in the cookies. So, if you are not going to glaze these, I would up the lime juice/and or zest, but thats just my opinion. For sure, though, TRY THESE! GREAT SPRING COOKIE!

Wheat Germ Whole-Wheat Buttermilk Pancakes

I just made a batch of these - so so yummy. I am going to own up right now though - I messed up! I totally forgot to add oil!!! I am not missing it though. This could be in part because I fried mine in a good dollop of coconut oil, which imparted the most delicious flavor, but maybe not. Either way - gotta try these!

Birdseed Treats

I added a tsp of vanilla and a tbsp cinnamon. I thought that it made the peanut butter mixture so so yummy. However, only 4 stars because I definitely didn't get 20 bars, and the pan size was way too big.

Favorite Old Fashioned Gingerbread

This was very good - and yes - very easy! I read the reviews before making, and did make a couple minor adjustments. 1) I used brown sugar, not white 2) added 2 additional tbsp of molasses 3)upped the cinnamon to 2 1/2 tsp and 4) added 1/2 tsp nutmeg. Made this into cupcakes, and baked for about 25 minutes at 350F. Frosted them with Molasses-Cinnamon Love Glaze, (my personal recipe) and topped with raisins. I will definitely be making this one again.

I try to stay away from these little devils, but dang, these are just so tasty!!! Anytime I make these for parties, which around the holidays, is often as they are so easy and quick, they are always a hit and go quickly.

Traditional Springerle

This was my first introduction to springerle. At first, I was unsure of these because I am not a fan of black licorice. After being talked into trying them, I was very surprised to find that anise in cookies is actually tasty! I really enjoyed these and was pleasantly surprised.
