About this Cook
I live in Texas in the beautiful Hill Country. I enjoy a lot of different things but my new hobby is cooking and learning about different sorts of food and ingredients. I have learned a lot from this site and from the great comments. That is my favorite part and why I decided to become more of a participant here.
My favorite things to cook
I am always looking for low carb recipes or at least for ones that can be made low carb. I like spicy food, seafood, beef, and vegetables. I love comfort food like mashed potatoes and gravy. I also enjoy trying more challenging dishes like the one I'm researching now: mole sauce. I'll let you know how it turns out!
My favorite family cooking traditions
In East Texas we used to catch our own fresh crab and have a feast! Being from the South/Southwest I enjoyed growing up on chicken fried steak and black eyed peas and other great Southern comfort food.
My cooking triumphs
I can make an awesome Hollandaise Sauce as well as perfectly poach an egg.
My cooking tragedies
All my cookies taste like flour.

Clark Gable Pancakes
These were so good. I was out of milk so I used half a cup of cream and half a cup of water and they still turned out beautifully. I used the 2 TBS of baking powder and they rose up to 2 inches while on the griddle. The outside was crunchy and the inside was bready. No need to buy mix from the store. These are delicious, easy and fast.

Red Pepper Soup
Very easy and good. I added a little salt, parsley and basil. I also pan-seared sea scallops and added three to each bowl of soup. Easy and impressive.

Irish Soda Bread
Changes: I left out the carraway seeds and I used about two cups of mixed raisins since that is how much came in the bag. The dough was very gooey and difficult to knead so I just stirred it. I forgot to carve the "X" in the top. The bread baked in about 50 minutes. It was VERY GOOD! I was afraid it would be crumbly but the crust was nice and crisp and the bread was sturdy. It was not too sweet but makes a good dessert. I'd like to try it as French toast.
