Morning Glory Muffins I

Tofu Parmigiana

This was terrible! I used extra firm tofu but it was still just spaghetti with mush. You could never have guessed the tofu was breaded or mistaken it for eggplant. Sorry but I won't be making this one again!

Tofu Lasagna

Really, really good! My only suggestion is an extra layer or two of marinara sauce because there is a lack of tomato taste. A sprinkling of Parmesan cheese also adds some zip. Wonderful texture though!

Quick Lemon Crisps

Delicious lemony flavor!! However, I prefer thicker, chewier cookies and these spread quite thin during baking. I solved this problem by refrigerating the dough and then rolling it into balls. A quick coating of powdered sugar doesn't hurt either!

Butter Bean Burgers

These are good but a little mushy to truly substitute for a hamburger. After a few hours in the frig, they easily formed patties. Great flavor!

Cherry Icebox Cookies

These were time-consuming and a little messy to make but turned out beautifully. Great choice for a cookie platter! I made four smaller logs instead of two big ones for easier handling. The taste is not obvious but a nice, subtle combination of butter and sweet cherries.

Tasty Tuna Burgers

Different and good. Spicy little kick. Refrigeration and a light touch will keep the patties together just fine without extra bread crumbs. Nice change from regular burgers and regular tuna!

Apple Pie Bars

Delicious! Just like apple pie! But that means this recipe is definitely not "traveler friendly". Much too much ooey gooey sticky streuselness to be a good item for packing. But that's ok; just eat them warm right out of the pan!

Lime Sandwich Sugar Cookies

Good cookies and very pretty, but the glaze was difficult to get to the correct consistency. I added almost double the powdered sugar to prevent it from flooding right over the cookie edge. Also, adding a drop of green food coloring to the glaze makes the cookies much more picturesque.

Wiggly Watermelon Cool 'n Easy Pie

This pie had the most disgusting texture ever, kind of like really spongy pudding! The flavor was completely artificial as well. My family flipped the entire pie over and just ate the crust!

Roasted Red Pepper Lasagna

This recipe is the best one I have pulled off this site! It's sooooooo good! Don't let the amount of work and time involved deter you from making this dish because it's sooooo yummy and totally worth it! I prefer dicing the roasted peppers instead of leaving them in slices though. Fabulous creamy twist on the standard lasagna fare. Yum yum; my new favorite pasta dish!!!!

Healthy Turkey Loaf

Great recipe for a "non-beef loaf"! Mild flavor but with a little tang. Serve with ketchup or salsa or add a little spice to the recipe. Very tasty with a festive appearance!

Tropical Lime Cake

This recipe is definitely different! The color is fabulous, and the flavor is highly unique. I like poking only a few holes in the cake and leaving most of the glaze on top of the cake. Great recipe when you are looking to make a statement!

Banana Chocolate Chip Cookies

This recipe has a great flavor! I like chewier cookies, so I flattened the cookies mid-way through baking. I also doubled the banana and used a 1/2 cup brown sugar and a 1/2 cup white sugar. Really easy and really yummy!

Easy Scalloped Potatoes

The flavor of this dish is decent, but there are a lot of problems along the way. First, make sure to use a shallow dish or else the milk just stays at the bottom. Second, the cheese and flour never really mixed together and the whole dish needs a lid in the oven to keep it from getting crusty and dry on top. Third, it takes more than ten minutes to prepare and at least sixty minutes in the oven. The flavor was fine, but not good enough to inspire me to try making this dish again.
